1 pound lean ground turkey
2 garlic cloves, minced
1 teaspoon plus 1/4 cup reduced-sodium soy sauce, divided
1/2 teaspoon ground ginger
1/4 cup rice vinegar
1/4 cup tomato paste
2 tablespoons molasses
1 teaspoon hot pepper sauce

Steps:

  • Preheat oven to 350°. Place turkey in a large bowl. Sprinkle with garlic, 1 teaspoon soy sauce and ginger; mix lightly but thoroughly. Shape into 1-in. balls; place in a 15x10x1-in. baking pan. Bake until cooked through, 20-25 minutes. , In a large saucepan, combine vinegar, tomato paste, molasses, pepper sauce and remaining soy sauce; cook and stir over medium heat 3-5 minutes. Add meatballs; heat through, stirring gently to coat.

1 teaspoon butter
1 egg, beaten
3 tablespoons soy sauce
1/2 cup dry bread crumbs
1/4 cup finely chopped water chestnuts
3 garlic cloves, minced
1 tablespoon minced fresh gingerroot
1 pound bulk pork sausage
1 tablespoon sesame seeds, toasted
SAUCE:
1/3 cup mayonnaise
1 tablespoon rice vinegar
1-1/2 teaspoons prepared wasabi

Steps:

  • In a small skillet, saute onions in butter until tender. Transfer to a large bowl. Add the egg, soy sauce, bread crumbs, water chestnuts, garlic and ginger. Crumble sausage over mixture and mix well., Shape into 1-in. balls. Place on an ungreased broiler pan. Bake at 350° for 15-20 minutes or until a thermometer reads 160°; drain. 1/2 cup chopped cilantro
1 teaspoon minced fresh garlic
1 teaspoon minced fresh ginger root
1/4 teaspoon red pepper flakes
1 tablespoon light soy sauce ((or use a gluten-free alternative))
1 teaspoon sesame oil
1/4 cup light soy sauce ((or use a gluten-free alternative))
1 teaspoon cornstarch
1 tablespoon honey
1 teaspoon hot sauce
1 teaspoon minced fresh garlic
1 teaspoon minced fresh ginger root
1 teaspoon sesame oil

Steps:

  • Preheat your oven to 400 degrees F. Line a large rimmed baking sheet with high-heat-resistant parchment paper.
  • Place the meatball ingredients in a medium bowl and use your hands to combine them. Shape into 24 meatballs, each weighing about 20 grams.

1 cup Panko or breadcrumbs
1/2 teaspoon ground ginger
2 large eggs
3 teaspoon minced garlic
1/2 Cup thinly-sliced green onions
Optional garnish: toasted sesame seeds, sliced scallions
2/3 cup hoisin sauce
1/4 cup rice vinegar
2 garlic cloves, minced
2 tablespoons soy sauce

Steps:

  • Preheat oven to 400.
  • In a large bowl, mix together meatball ingredients until well-combined. Shape into balls (I made mine about 1.5 inches, which yielded about 35 meatballs, but 1 inch is probably standard), and place on a greased baking sheet or in a 9×13 baking dish.

  • While the meatballs are baking, whisk together all of the sauce ingredients until blended. 1/2 cup whole milk
1/2 pound ground pork
1/2 pound ground lamb
1/2 pound ground bison
3 garlic cloves, chopped
1 tablespoon peeled and finely grated fresh ginger
2 serrano peppers, chopped
2 shallots, chopped
1/2 tablespoon fish sauce
1 tablespoon soy sauce
1/2 teaspoon plum vinegar
1/2 teaspoon mirin
1 lime, juiced
1/2 cup chopped fresh cilantro leaves
Kosher salt and freshly ground black pepper
1 egg
3 to 4 tablespoons olive oil
1 jar sweet chili sauce
1/2 cup panko crumbs, toasted
3 tablespoons chopped crystallized ginger

Steps:

  • Soak the slice of bread in the milk in a small bowl.
  • Mix the ground meats, soaked bread, and all remaining ingredients, up to the olive oil, until well combined.
  • Roll the meat mixture into walnut-sized balls. In a large saute pan, over medium-high heat, heat the olive oil and sear the meatballs. If you can't fit them all in the pan at once, cook in batches. Sear into golden brown, about 8 to 10 minutes. Cool slightly.
  • In a small saucepan, heat the chili sauce over low heat.
  • Stick a toothpick or skewer into each meatball, then dip them into the sauce. Roll the tips in toasted panko and crystallized ginger and serve.

PLUM SAUCE
18 ounce(s) plum preserves, jar

Steps:

  • Preheat oven to 350 degrees. Mix beef, onion, basil leaves, soy sauce, vinegar, beaten egg, salt & pepper in medium size mixing bowl. Form meatballs with 1 tbsp size scoops and place on lightly oiled sheeetpan. Bake about 20 minutes. Spoon meatballs into serving bowl and allow to sit for 10 minutes before serving.
  • Plum Sauce: Place preserves, soy sauce, hot sauce, rice vinegar, and brown sugar into small saucepan over medium-low heat. Stir the contents often to help the brown sugar to dissolve and the preservatives to liquify. Allow sauce to go just to a soft boil, lower heat, and continue heating for about 10 minutes so it reduces slightly. Remove from heat and allow to cool at least 10 minutes.
  • When sauce has slightly cooled, pour 1/2 of the sauce over the meatballs and gently mix well. Add more sauce if needed or reserve for future use.
