3 ounce cream cheese (, softened)
2 tablespoons mayonnaise
2 tablespoons cheddar cheese (, shredded)
2 dashes Worcestershire sauce
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon Kosher salt
1/4 teaspoon white pepper
1/2 cup blue crab meat
2 tablespoons panko bread crumbs
Scallions or chives (, for garnish)

Steps:

  • Preheat oven to 350 degrees.
  • In a small bowl, combine cream cheese, mayonnaise, cheddar cheese, Worcestershire sauce, garlic powder, onion powder, Kosher salt and white pepper. Mix until well combined. You can use an electric mixer or stand mixer for this portion.

  • Preheat the oven to 425 degrees F. Remove the stems from 24 large cremini mushrooms.
  • Wipe the caps clean with a damp paper towel, then toss with 2 tablespoons olive oil and season with salt. Arrange on a baking sheet.
  • Finely crush 20 butter crackers (such as Ritz); mix with 2 tablespoons melted butter. Melt 2 more tablespoons butter in a skillet over medium heat. Add 1/2 cup each finely chopped celery and red bell pepper; cook until softened, 5 minutes. Add 1 chopped garlic clove; cook 1 minute. Combine 4 ounces cream cheese and 2 tablespoons mayonnaise in a large bowl; add 1/2 cup chopped scallions, 1/4 cup each grated parmesan, cracker crumbs and chopped parsley, the zest and juice of 1 lemon, the celery mixture and 8 ounces lump crabmeat. Divide among the mushroom caps and sprinkle with the remaining cracker crumbs.
  • Bake 12 to 15 minutes, then broil until golden. Let cool 5 minutes, then remove from the baking sheet.

3 tablespoons grated Parmesan cheese

  • Preheat the oven to 350 degrees F (175 degrees C).

24 Fresh Mushrooms
2 tbsp Unsalted Butter
2 tbsp Green Onions (Minced)
1 tsp Fresh Lemon Juice
1 cup Cooked Crabmeat (Diced)
½ cup Soft Bread Crumbs
1 Large Egg (Beaten)
½ tsp Dried Dill
½ tsp Dried Thyme
½ cup Italian Cheese (Shredded)
½ cup Parmesan Cheese (Shredded)
½ cup Dry White Wine

Steps:

  • Preheat oven to 400 degrees.
  • Prep 9 x 13 inch baking dish with non-stick baking spray.
  • Cut the stems from each mushroom. Set aside. Melt the butter in a saucepan on medium heat.
  • Chop the stems into fine pieces.
  • Add the stems and the minced green onions in the saucepan, cooking for about 3 minutes.
  • Remove the saucepan from the stove.

1/4 cup finely diced onion
1/4 cup finely diced celery
1 ounce white wine
1/4 teaspoon white pepper
1/2 teaspoon thyme
1 teaspoon lemon juice
4 ounces lump crabmeat or 4 ounces king crab meat
1 ounce heavy cream or 1 ounce half-and-half cream
1/4 cup shredded swiss cheese or 1/4 cheddar cheese
1/2 cup breadcrumbs
16 stuffing mushrooms, stems removed
16 slices swiss cheese (small thin slices) or 16 slices cheddar cheese (small thin slices)

Steps:

  • Preheat oven to 375°F.
  • Melt butter in a medium skillet over medium heat and sauté onion and celery until soft. Add wine, seasonings, lemon juice and crabmeat; simmer about 3 minutes.

1/2 cup milk
2 slices bread, crusts removed and cubed
1-1/2 teaspoons Worcestershire sauce
1 teaspoon dried minced onion
1/2 cup mayonnaise
1 tablespoon lemon juice
1/2 teaspoon salt
1/8 teaspoon pepper
48 whole medium mushrooms
3 cans (6 ounces each) crabmeat, drained, flaked and cartilage removed

Steps:

  • In a large saucepan, melt 1 tablespoon butter. Stir in flour until smooth. Gradually stir in milk. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. I created this recipe when I was 20, I was always invited to the family get togethers, but never asked to bring something- I was still considered one of the "kids." I tried to copy an appetizer I had at a Jersey Shore restaurant- not sure which one. It became a family classic and I am always asked to bring it now. They reheat very easy in the oven. How many you get depends on the size of the mushrooms, you can also substitute Parmesan for the breadcrumbs.

1 lb button mushroom
1 medium green pepper, very finely chopped
1 medium onion, very finely chopped
4 tablespoons butter
1 lb fresh crabmeat or 2 (6 ounce) cans crabmeat, drained
1 teaspoon italian seasoning
1/4 cup breadcrumbs
2/3 cup mayonnaise
4 tablespoons butter, melted
