Yield 4 servings

Number Of Ingredients 13

2 cups all-purpose flour
1 cup boiling water
1/2 cup sliced scallions
1 tablespoon sesame oil
1/2 cup canola oil
Salt and black pepper to taste
1/2 cup Ginger Dipping Sauce, recipe to follow

1/4 cup sliced scallions
1 teaspoon minced ginger
1 teaspoon red pepper flakes
1 teaspoon sugar

Steps:

  • In a bowl, sift flour. Slowly add water in a steady stream while mixing with a wooden spoon. Keep adding water until a ball is formed. With the same procedure, one can use a food processor with a metal blade. Let ball of dough relax for about 30 minutes and cover with damp cloth.
  • On a floured surface, roll out dough into a thin rectangle. Brush on oil mixture, cover with scallion and season with salt and pepper. Carefully roll dough like a sponge cake. Cut into 4 pieces. Take one piece and twist 3 times. Make a spiral out of this and roll again and flatten to achieve a 5 to 6 inch pancake. Sauce:
1 (½") piece ginger, peeled, thinly sliced
2 Tbsp. low-sodium soy sauce
2 Tbsp. unseasoned rice vinegar
1 tsp. chili oil
1 tsp. sugar
Pancakes and assembly:
1 cup all-purpose flour
¼ cup cornstarch
1 tsp. kosher salt
1 tsp. sugar
1 cup chilled club soda
2 tsp. low-sodium soy sauce
1 tsp. toasted sesame oil
10 scallions, thinly sliced on a diagonal (about 2 cups)
4 Tbsp. vegetable oil

Steps:

  • Sauce:
  • Whisk ginger, soy sauce, vinegar, chili oil, and sugar in a small bowl until sugar is dissolved. Set sauce aside.
  • Pancakes and assembly:
  • Whisk flour, cornstarch, salt, and sugar in a large bowl. Whisk club soda, soy sauce, and sesame oil in a medium bowl to combine, then pour into dry ingredients and whisk until smooth (be careful not to overmix; it's okay if there are a few small lumps). Fold in scallions.
  • Heat 1 Tbsp. oil in a medium nonstick skillet over medium-high. Pour ¼ cup batter into skillet. Cook, moving pan around on the burner for even cooking, until bottom of pancake is set and golden, about 2 minutes. Flip and cook, pressing down on pancake to create direct contact with pan, until other side is golden, about 1 minute. Continue cooking, turning often to keep scallions from burning, until golden brown and crisp and cooked through, about 5 minutes longer. Transfer pancake to a wire rack. Repeat process with remaining batter and remaining 3 Tbsp. oil 3 more times to make a total of 4 pancakes.
  • Cut each pancake into wedges if desired and serve with reserved sauce on the side for dipping.

1 tablespoon rice vinegar
1 tablespoon hot chili paste, such as sriracha hot chili paste
1 tablespoon sugar
1 teaspoon toasted sesame oil
1 teaspoon toasted sesame seeds
1 big slice fresh ginger, smashed
1/2 bunch fresh cilantro, leaves and stems
1 large egg
3/4 cup water
1 teaspoon toasted sesame oil
Pinch kosher salt
1 cup all-purpose flour
1/4 cup finely chopped fresh cilantro
1/4 cup finely chopped scallion
1 tablespoon toasted sesame seeds
Peanut oil, for frying

Steps:

  • For the dipping sauce: Combine all the dipping sauce ingredients in a bowl and let it sit while you make the pancakes. Remove the ginger and cilantro before serving.
  • For the pancakes: Put the egg, water, sesame oil, and salt into a blender and blend well. Add the flour and blend until smooth, it should be the consistency of heavy cream. Stir in the cilantro, scallion, and sesame seeds. Heat a large nonstick skillet over medium high heat; add 1 teaspoon peanut oil and spread it around the pan with a paper towel. Pour in half the batter, swirling and tipping the pan to get one thin layer over the bottom of the pan. Cook until set, about 2 minutes. SCALLION PANCAKES WITH DIPPING SAUCE RECIPE - (4.4/5)

Scallion Pancakes with dipping sauce Recipe - (4.4/5) image

Provided by á-75888

Number Of Ingredients 13

Dipping sauce:
Ingredients
2 1/2 cups white flour
1 cup warm water
Oil for the pancakes, such as vegetable, sesame, or shortening
Coarse kosher salt
1 bunch scallions
High smoke point oil for the pan, such as vegetable, canola, or peanut oil
1/4 cup soy sauce
1 tablespoon honey
1 tsp hot chili oil
1 tsp sesame oil
chopped scallion

Steps:

  • Instructions 1. Make the dough and let it rest: Mix 2 1/2 cups flour with 1 cup water until it forms a smooth dough. Knead by doubling the dough over and pressing it down repeatedly, until the dough is even more smooth and very elastic. Coat this ball of dough lightly in oil and put it back in the bowl. Cover the bowl with a damp cloth and let the dough rest for about 30 minutes. 2. Roll out the dough: Cut the dough into 4 equal parts. Lightly oil the back of a large metal baking sheet (or a smooth stone countertop or pastry board). Roll out one part of the dough on the back of the baking sheet. Roll until it is a thin rectangle at least 12 x 9 inches. 3. Chop the scallions: Finely chop the bunch of scallions. (I usually use the green tops and just the very top of the white parts.) Set them on your work surface along with a small bowl of kosher salt. 4. Top the dough: Lightly brush the top of the dough with oil, then sprinkle it evenly with chopped scallions and kosher salt. 5. Roll up the dough: Starting from the long end, roll the dough up tightly, creating one long snake of rolled-up dough. 6. Cut in half: Cut the dough snake in two equal parts. 7. Coil the dough and let it rest: Take one of these halves and coil into a round dough bundle. Let it rest for at least 15 minutes and ideally longer, while you repeat this process with the rest of the dough. 8. Roll out the coil: Pat a coiled dough bundle into a flat, smooth, round pancake. You can do this with a rolling pin or with your hands. 9. Cook the pancake for 2 minutes: Heat a 10-inch heavy skillet or sauté pan over medium-high heat, and oil it with a drizzle of canola, vegetable, or peanut oil. When the oil shimmers, pick up the pancake dough and lay it gently in the pan. It should sizzle, but not burn. Cook for 2 minutes on one side. 10. Flip and cook for an additional 2 minutes: Flip the pancake over with a spatula and cook for an additional 2 minutes on the other side, or until golden brown. Repeat steps 9-11 with the rest of the pancake dough coils.

Tips:

  • For the best scallion pancakes, use high-quality scallions. Look for scallions that are fresh, green, and have a firm texture.
  • When cutting the scallions, be sure to cut them into very thin slices. This will help them to cook evenly and will also make the pancakes more tender.
  • Do not overmix the batter. Overmixing the batter will make the pancakes tough. Mix the batter just until the ingredients are combined.
  • When cooking the pancakes, be sure to heat the oil over medium heat. If the oil is too hot, the pancakes will burn. Cook the pancakes for 2-3 minutes per side, or until they are golden brown and crispy.
  • Serve the scallion pancakes immediately with the chili-ginger dipping sauce. The pancakes are best when they are hot and crispy.

Conclusion:

Scallion pancakes are a delicious and easy-to-make appetizer or snack. They are perfect for parties or potlucks. The chili-ginger dipping sauce adds a nice spicy and tangy flavor to the pancakes. With a few simple ingredients and a little bit of time, you can make these delicious scallion pancakes at home. So next time you are looking for a tasty and satisfying snack, give this recipe a try. You won't be disappointed!
