6 scallions, divided
2 cups water
1 1/2 cups reduced-sodium chicken broth
1 (2-inch) piece peeled ginger, sliced
1 skinless boneless chicken breast half (6 to 8 ounces)
2 large eggs, lightly beaten
1/4 teaspoon white pepper (optional)
Accompaniment:

Steps:

  • Smash 3 scallions and cut into 2-inch pieces, then put in a 2-quart saucepan with water, broth, ginger, and 3/4 teaspoon salt. 4 tablespoons butter
12 scallions, green and white parts, sliced thinly
3 garlic cloves, finely chopped (or to taste)
4 tablespoons all-purpose flour
3 cups low sodium chicken broth (or for a vegetarian soup, use vegetable stock)
8 ounces mushrooms, coarsely chopped
1/2 cup heavy cream or 1/2 cup half-and-half, if you want to conserve calories
salt & freshly ground black pepper (to taste)
chopped fresh tarragon (to garnish) or chives (to garnish)

Steps:

1 lemon
2 fresh rosemary sprigs, cut in half
1/2 cup extra-virgin olive oil
2 tablespoons unsalted butter
1 bunch scallions, thinly sliced (white, light green and dark green parts kept separate)
4 cloves garlic, minced
Kosher salt and freshly ground black pepper
4 cups low-sodium chicken broth
1 pound frozen shoestring-style French fries (about 6 cups), thawed
1/2 baguette, sliced in half lengthwise
1/3 cup sour cream

Steps:

  • Set the oven to broil with a rack set about 4 inches from the heat source.
  • Peel the zest away from the lemon in long strips, avoiding the white pith. Place the lemon zest, rosemary sprigs and oil in a small saucepan over medium-low heat and heat until the oil just comes to a simmer, about 10 minutes. Turn off the heat and allow to sit at room temperature while you prepare the soup.
  • Melt the butter over medium heat in a large saucepan. Add the white and light green parts of the scallions (about 1/2 cup) and the garlic. 3 1/2 cups vegetarian broth (see Micro Tips) or canned chicken broth
4 teaspoons cornstarch

2 pounds skin-on, bone-in chicken drumsticks or thighs
1 teaspoon kosher salt
One 3-inch piece fresh ginger, peeled and sliced into 1/8-inch pieces
2 tablespoons soy sauce or tamari
4 scallions, sliced on a bias into 1-inch pieces
2 large carrots, chopped into coins
1 tablespoon Chinese black vinegar
Toasted sesame oil, for serving
Sambal oelek, for serving
1 cup matzo meal
Kosher salt
1/4 cup vegetable oil
4 large eggs, separated
4 scallions, chopped

Steps:

  • For the soup: Season the chicken all over with the salt. Tie up the ginger in a piece of cheesecloth (or put in a tea bag or tea ball). Put the chicken and ginger in a large pot with the soy sauce, scallions, carrots and 8 cups water and bring to a boil over high heat.
