EASY MICROWAVE SCALLOPED POTATOES

Easy Microwave Scalloped Potatoes image

This came from a recipe book given to me by my grandmother-in-law. I like it because it cooks in about 1/2 the time of regular (oven) scalloped potatoes, and tastes basically the same. Great for weeknights when time is at a premium, or if you have no room in the oven. (Note, I noticed other recipes for scalloped potatoes call for cheese or other ingredients - this is scalloped potatoes like my mom used to make, basically just white sauce and potatoes. We always eat ours with lots of ketchup on top!)

Time 40m

Yield 4-6 serving(s)

Number Of Ingredients 7

3 tablespoons margarine or 3 tablespoons butter
2 tablespoons flour
2 cups milk
1 teaspoon salt
1/4 teaspoon pepper
4 -6 medium potatoes, sliced
1 small onion, sliced

Steps:

  • Put margarine (or butter) into LARGE glass bowl, and microwave on High for 1 minute, or until melted. (If you really like cleaning your microwave, feel free to use a smaller bowl.).
  • Blend in flour, salt & pepper. Gradually stir in milk.
  • Microwave on High 8-10 minutes, stirring after 4 minutes.
  • Layer half the potatoes and onion in a greased 2-quart casserole dish. Top with half the prepared sauce, then the rest of the potatoes and onion, then the rest of the sauce.
  • Cover and microwave on High 20 minutes, or until done. (Cooking times will depend on the strength of your microwave; I think ours is in the 1,200-watt range, and 20 minutes usually works just fine for us).

SCALLOPED POTATOES (MICROWAVE) RECIPE - (4.1/5)

Scalloped Potatoes (Microwave) Recipe - (4.1/5) image

Provided by á-646

Number Of Ingredients 7

3 tbsp. butter
3 tbsp. flour
1 1/2 c. milk
1/4 tsp. salt
1/8 tsp. pepper
3 c. sliced potatoes
1 sm. onion, sliced thin

Steps:

  • Melt butter in 4 cup glass measure, uncovered on High (maximum power) for 1 minutes. Stir in flour. Heat milk in 2 cup glass measure, uncovered on 70 (Roast) for 5 to 6 minutes or until mixture boils and thickens. Stir twice during this time. In 2-quart microproof casserole, combine potatoes, onion, and white sauce. Cover with waxed paper and cook on 90 (Saute) for 9 minutes. Stir. Cover and cook on 90 (Saute) for 9 to 10 minutes, or until potatoes are tender. Sprinkle with paprika if desired.

Tips:

  • Choose the right potatoes: Yukon Gold or Russet potatoes are best for scalloped potatoes because they hold their shape well and have a creamy texture.
  • Slice the potatoes thinly: This will help them cook evenly in the microwave.
  • Use a microwave-safe casserole dish: Make sure the dish is large enough to hold all of the ingredients comfortably.
  • Layer the potatoes and sauce: Start with a layer of potatoes, then add a layer of sauce, and repeat until all of the ingredients have been used.
  • Cover the casserole dish: This will help the potatoes steam and cook evenly.
  • Cook the potatoes on high power for 10 minutes: Then, reduce the power to medium and cook for an additional 10-15 minutes, or until the potatoes are tender.
  • Let the potatoes rest for a few minutes before serving: This will help them firm up and make them easier to slice.

Scalloped potatoes are a classic comfort food that can be easily made in the microwave. By following these tips, you can make scalloped potatoes that are creamy, cheesy, and delicious. They are perfect for a weeknight meal or a special occasion. So next time you're looking for a quick and easy side dish, give these scalloped potatoes a try. You won't be disappointed!
