Cooking pork loin in milk is a great way to ensure a juicy and flavorful result perfect for serving with seasonal vegetables, or with potatoes and a green salad.

1 teaspoon prepared mustard
1 teaspoon caraway seeds
5 allspice berries, or more to taste
¼ teaspoon ground nutmeg
salt and ground black pepper to taste
1 (2 pound) boneless pork loin roast
1 cup butter
1 quart milk

Steps:

  • Combine mustard, caraway seeds, allspice berries, ground nutmeg, salt, and black pepper in a small bowl to make spice mixture.
  • Rub spice mixture evenly over the pork loin. Cover with plastic wrap and let marinate in the refrigerator, at least 2 hours and up to 12 hours.
  • Melt butter in a large skillet over medium-high heat. Add pork loin; cook until browned on all sides, 2 to 3 minutes per side.
  • Bring milk to a boil in a deep saucepan. Lower pork loin carefully into the saucepan. Reduce heat and simmer, stirring often and adding melted butter as milk evaporates, until pork is slightly pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
  • Slice pork loin and place on a serving platter. Pour milk and butter mixture over slices.

1 2-pound boneless pork loin, preferably with a 1/4" layer of fat
2 teaspoons kosher salt plus more for seasoning
Freshly ground black pepper
1 tablespoon unsalted butter
1 tablespoon vegetable oil
1 1/2 cups whole milk
1/2 teaspoon freshly grated nutmeg

Steps:

  • Season pork with 2 teaspoons salt and pepper. In a small heavy pot just wide enough to fit pork loin, heat butter and oil over medium-high heat until butter is melted. Add pork and cook, turning occasionally, until browned on all sides, about 10 minutes. Transfer to a plate. Pour off fat in pot; wipe out pot and let pot cool slightly. Add milk and nutmeg. Return pork to pot.
  • Bring milk mixture just to a boil. Reduce heat to medium-low. Cover pot and simmer gently, turning meat every 30 minutes, until meat is tender but not falling apart, about 2 hours. Transfer meat to a cutting board. Let rest for 10 minutes.
  • Simmer liquid in pot, uncovered, until reduced by two-thirds and small golden-brown curds form throughout sauce, about 10 minutes. Season to taste with salt and pepper.
  • Cut pork into 1/3" slices. Arrange on a serving platter. Spoon sauce over and around pork.

1 (2 -3 lb) boneless pork loin
2 teaspoons salt
1/4 teaspoon dried marjoram
1 teaspoon caraway seed
50 g butter

Steps:

  • Preheat oven to 425°F Score the fat of the pork with a knife and rub with salt, majoram and caraway seeds over the meat.
  • In a large pan, melt the butter over high heat and seal the meat rapidly.
  • When the pork is brown all over, place into a roasting dish and roast for 2 1/2 hours, basting frequently.
  • Serves 6.

1 teaspoon salt
1/8 teaspoon pepper
1 (3 lb) boneless pork loin roast
10 whole cloves
5 cooking apples, peeled and diced
1/2 cup sugar
1 cinnamon stick, 3-inch piece
1 tablespoon lemon juice
1 cup water

Steps:

  • Preheat oven to 350°F.
  • Rub salt and pepper into pork; press cloves into pork at equal intervals. Place pork, fat-side up, on a rack in a roasting pan. Roast in center of oven 1-1/2 hours, turning occasionally.
  • Prepare applesauce while roast is in oven: In a medium saucepan, combine apples, sugar, cinnamon stick, lemon juice and water. Cook over medium heat 10 minutes. Remove cinnamon stick. Press mixture through a sieve or puree in a blender or food processor. Set aside to cool.
  • Remove roast from oven. Coat pork generously with applesauce; return to oven. Without turning again, roast 30 minutes longer. Applesauce will form a golden-brown glaze over pork. Turn off oven; leave roast in oven 10 minutes longer.
  • Carve pork into thick slices. Serve with additional applesauce.
