Along with tuna and swordfish, salmon is considered a "red meat" of the fish world, and it can stand up to strong flavors like balsamic vinegar. Here we reduce the vinegar to a glaze, tempering the sharpness of the acid. The tangy sauce that results bring out the sweetness of the crisp-crusted salmon.

2 tablespoons salted butter
1 cup chopped fresh figs
½ cup balsamic vinegar
½ cup chicken stock
1 tablespoon honey
1 tablespoon chopped fresh thyme
2 (5 ounce) salmon fillets

Tips:

  • Choose the right salmon. Look for wild-caught salmon that is sustainably sourced. If you can't find wild-caught salmon, choose farm-raised salmon that is raised without antibiotics or hormones.
  • Use a good quality balsamic vinegar. The balsamic vinegar you use will make a big difference in the flavor of the sauce. Look for a balsamic vinegar that is aged for at least 12 years.
  • Don't overcook the salmon. Salmon is a delicate fish, so it's important not to overcook it. Cook the salmon until it is just cooked through, but still moist and flaky.
  • Make sure the sauce is well reduced. The balsamic sauce should be thick and syrupy. If the sauce is too thin, it will not coat the salmon properly.
  • Serve the salmon immediately. Salmon is best served immediately after it is cooked. If you need to hold the salmon for a while, keep it warm in a low oven or on a warming tray.

Conclusion:

Seared salmon with balsamic sauce is a delicious and easy-to-make dish that is perfect for any occasion. The salmon is cooked to perfection and the balsamic sauce is rich and flavorful. This dish is sure to impress your guests, and it's also a healthy choice. So next time you're looking for a quick and easy meal, try this seared salmon with balsamic sauce.
