SECRET DEVILED EGGS
Secret ingredient is Durkee's Famous Sauce. Just can't have a potluck, reunion, picnic or guests for dinner without deviled eggs!! Secret to successful stuffing?...mash yokes good and beat until fluffy. Secret to having enough stuffing in eggs?...boil 1 or 2 extra eggs and this also allows for any egg which tears in peeling or in stuffing.

Steps:
- Boil 6 eggs until hard boil stage and allow to cool. (May boil 1 or 2 extra eggs to allow for larger amount of stuffing and for substitution of torn eggs in peeling.) After removing from heat place in cold water so egg white will not become discolored.
- Peel and cut into halves. Place yokes into small bowl and mash out all lumps. Beat yokes by hand until fluffy.
- Add mayonnaise, Durkee's famous sauce, pickle relish, salt and pepper. Stuff eggs. Sprinkle top with paprika.
- Note: Durkee Famous Sauce is a sandwich and salad sauce with a tangy, mustard-mayonnaise flavor. Can be found in most grocery stores.

Tips:
- Select the freshest eggs possible: Fresh eggs will have a brighter yolk and a firmer white, resulting in a better-tasting and more visually appealing stuffed egg.
- Hard-boil the eggs perfectly: Overcooked eggs will be dry and rubbery, while undercooked eggs will be runny. For perfectly hard-boiled eggs, place the eggs in a saucepan and cover them with cold water. Bring the water to a boil over high heat, then cover the saucepan and remove it from the heat. Let the eggs stand in the hot water for 10-12 minutes, depending on the size of the eggs. Drain the hot water and immediately transfer the eggs to an ice bath to stop the cooking process.
- Use high-quality ingredients: The quality of your ingredients will directly impact the taste of your stuffed eggs. Use fresh herbs, flavorful cheeses, and creamy mayonnaise. If you're using a recipe that calls for bacon, cook it until it's crispy and crumbled.
- Be creative with your fillings: There are endless possibilities when it comes to fillings for stuffed eggs. Get creative and experiment with different flavors and textures. Some popular fillings include:
- Classic deviled eggs: A mixture of mayonnaise, mustard, vinegar, and paprika
- Guacamole deviled eggs: A mixture of mashed avocado, sour cream, lime juice, and cilantro
- Bacon and cheese deviled eggs: A mixture of crumbled bacon, shredded cheddar cheese, and mayonnaise
- Crab and shrimp deviled eggs: A mixture of cooked crab meat, shrimp, mayonnaise, and Dijon mustard
- Smoked salmon and dill deviled eggs: A mixture of smoked salmon, chopped dill, and mayonnaise
- Garnish your stuffed eggs attractively: A simple garnish can make your stuffed eggs look more appealing and inviting. Try sprinkling them with chopped herbs, grated cheese, or paprika. You can also garnish them with a dollop of caviar or a sprig of fresh dill.
Conclusion:
Stuffed eggs are a delicious and versatile appetizer that can be enjoyed on any occasion. With a little creativity and effort, you can create stuffed eggs that are sure to impress your guests. So next time you're looking for a quick and easy appetizer, give stuffed eggs a try. You won't be disappointed!
