Time 30m

Number Of Ingredients 10

Coarse salt and freshly ground pepper
2 tablespoons extra-virgin olive oil
2 slices bacon, finely chopped
1/2 cup chopped scallions
2 cups cleaned sliced mixed mushrooms, such as shiitake, oyster, and cremini
2 cups chicken stock or canned chicken broth
1 1/2 cups frozen baby peas, thawed
1 tablespoon unsalted butter
1 pound small pasta shells
1/2 cup freshly grated Grana Padano or Parmigiano-Reggiano (2 ounces)

Steps:

  • Bring a large pot of salted water to a boil for pasta. In a large skillet, heat oil over medium. Add bacon and scallions and saute until scallions are wilted, about 4 minutes. Add mushrooms and sprinkle with salt. Continue to cook, stirring occasionally, until mushrooms have released their moisture, about 5 minutes.
  • Add stock, peas, and butter and season lightly with salt and pepper. Simmer until liquid is reduced by half, about 10 minutes. Check seasoning and adjust if necessary. Meanwhile, stir pasta into boiling water and cook, stirring occasionally, until al dente, about 12 minutes.
  • Drain pasta and return to pot. Add sauce and stir over low until pasta is coated. Remove from heat and add cheese. Toss well and serve.

Sauteed Peas With Mushrooms and Garlic image

This recipe dresses up a plain vegetable and makes it an elegant company dish. Simple, easy, and quick.

Provided by papergoddess

Categories     Vegetable

Time 20m

Yield 4-6 serving(s)

Number Of Ingredients 5

1 (16 ounce) bag frozen peas
8 ounces sliced mushrooms
2 -4 garlic cloves, to your taste
4 tablespoons butter
salt and pepper

Steps:

  • Melt butter in skillet.
  • Add mushrooms and garlic.
  • Saute until mushrooms are tender, about 5 minutes.
  • Add frozen peas and stir to coat.
  • Cover pan tightly and simmer for approx 15 minutes, or until peas are tender, stirring occasionally.
  • Salt and pepper to taste.

Tips:

  • Use fresh ingredients: Fresh peas and mushrooms will give your dish the best flavor.
  • Choose the right pasta: Shells are a classic choice for this dish, but you can also use other short pastas like penne or rotini.
  • Don't overcook the pasta: Cook the pasta according to the package directions, but be careful not to overcook it. Al dente pasta is best.
  • Sauté the mushrooms and peas separately: This will help to prevent the mushrooms from releasing too much water and making the dish watery.
  • Add the peas and mushrooms to the pasta at the end: This will help to keep them from getting overcooked.
  • Season the dish to taste: Add salt, pepper, and other seasonings to taste.
  • Garnish with fresh herbs: Fresh parsley or basil are both good choices.

Conclusion:

This simple and delicious pasta dish is perfect for a quick and easy weeknight meal. It's also a great way to use up leftover peas and mushrooms. With a few simple ingredients and a little bit of time, you can have a delicious and satisfying meal on the table in no time.
