1/4 cup sun-dried tomatoes in oil, drained and chopped (8 tomatoes)
8 ounces cream cheese, at room temperature
1/2 cup sour cream
1/2 cup good mayonnaise
10 dashes, hot red pepper sauce
1 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
2 scallions, thinly sliced (white and green parts)

Steps:

  • Puree the tomatoes, cream cheese, sour cream, mayonnaise, red pepper sauce, salt and pepper in a food processor fitted with a metal blade. Add the scallions and pulse twice. Serve at room temperature.

8 ounces sun-dried tomatoes
3 -4 garlic cloves, to taste
8 leaves basil, chopped (or more, depending on how much you like the taste)
salt, to taste
black pepper, to taste
1 tablespoon vinegar
1/2-1 cup water
2 tablespoons olive oil

Steps:

  • Cover the tomatoes in boiling water for about 30 minutes.
  • Squeeze dry and then slice on a cutting board.
  • Put them into a food processor with the garlic and basil and process for a minute or two.
  • Add the vinegar.
  • Start adding water, one tablespoon at a time, while the machine is running.
  • The mass should start to turn into a deep red paste.
  • Add one tablespoon of oil.
  • Taste and then add the salt and pepper as needed (some brands of dried tomatoes are very salty).
  • You may need more water to make it spreadable.
  • Spoon into a glass jar, pressing down with a spoon and then pour olive oil over top to keep out the air.
  • Always make sure that the top is covered with olive oil.
  • Keep refrigerated.

1 (8 ounce) package cream cheese
1/2 cup crumbled feta cheese
1 teaspoon dried oregano
1/2 cup sun-dried tomato packed in oil
1/2 cup finely chopped toasted walnuts
