SHRIMP AND BROCCOLI QUICHE

This is a variation of recipe #93358 (Kittencal's Seafood Cream Cheese Quiche). I changed the size to 1 quiche, and changed a couple of the ingredients. For the pie shell, I use a Pillsbury refrigerated pie crust.

Time 1h5m

Yield 4 serving(s)

Number Of Ingredients 11

1 pie crust (9 inch)
1 tablespoon butter
1/3 cup onion, chopped
1 teaspoon garlic, minced
1 cup broccoli, steamed and chopped
1/2 lb small shrimp, shelled, deveined, and cooked
4 ounces monterey jack cheese, shredded
3 large eggs, beaten
4 ounces cream cheese, softened (I use low-fat)
1/2 cup fat-free half-and-half
1 dash cayenne pepper, if desired

Steps:

  • Preheat oven to 425°.
  • Place pie crust into pie plate, according to the directions on the package.
  • Depending on your oven, you might find it necessary to pre-bake the crust before filling. You can find directions for "blind baking" at http://www.ochef.com/955.htm If you do that, you will probably need to adjust the baking time for the quiche and eliminate the first baking at 425°.
  • In a saute pan, melt butter and saute the onion and garlic until soft. Stir in broccoli and shrimp, then pour into pie crust.
  • Top with shredded cheese.
  • Mix together the eggs, cream cheese, half-and-half and cayenne (if desired) and pour over cheese. I used a hand mixer for this and had to take out a couple of tablespoons of the egg mixture so it wouldn't run over the pie shell.
  • Bake at 425° for 10 minutes. Reduce temp to 350° and bake for 30 minutes more.

SHRIMP AND BROCCOLI QUICHE

Another one from my old recipe files.

Categories     Seafood

Number Of Ingredients 8

1 recipe pastry for single crust pie (or use store bought)
1/2 cup broccoli, cut into 1/2" pieces
3 eggs
3/4 cup milk
3/4 cup light cream
1 can (4.5 oz) shrimp, rinsed and drained
1 1/2 cup shredded jack cheese (6 oz)
1 tbsp. flour

Steps:

  • 1. On lightly floured board, roll out pastry to 12" circle. Transfer to 9" pie plate or quiche dish. Trim edges. Flute. Line pastry shell with double thickness of foil. Bake in 450 oven for 5 to 7 minutes. Remove foil and bake 5 to 7 minutes more or until pastry is nearly done. Remove from oven. Reduce heat to 325.
  • 2. Meanwhile, in small pan, cook broccoli, covered in small amount of salted boiling water for 3 minutes. Drain well; beat together eggs, milk, light cream and 1/8 t. salt. Stir in broccoli and shrimp. Mix cheese and flour.
  • 3. Add to egg mixture; pour egg mixture into hot pastry shell. Bake in 325 oven for 40 minutes or until knife inserted off center comes out clean. If needed, cover edges of pastry with foil to prevent over browning. Let stand 10 minutes before serving. Serves 6 Source: My Old Recipes

Tips:

  • Prep your ingredients: Before starting, make sure all your ingredients are prepped and measured. This will help you save time and avoid scrambling during the cooking process.
  • Use fresh shrimp: For the best flavor, use fresh shrimp if possible. If using frozen shrimp, thaw them thoroughly before cooking.
  • Cook the shrimp properly: Shrimp cooks quickly, so be careful not to overcook it. Cook it until it is just opaque and pink, about 2-3 minutes per side.
  • Use a nonstick skillet: A nonstick skillet will help prevent the quiche from sticking and make it easier to remove from the pan.
  • Don't overmix the batter: Overmixing the batter will make the quiche tough. Mix just until the ingredients are combined.
  • Bake the quiche until it is set: The quiche is done baking when a toothpick inserted into the center comes out clean. This usually takes about 30-35 minutes.
  • Let the quiche cool before serving: Allow the quiche to cool for at least 15 minutes before serving. This will help it set and make it easier to slice.

Conclusion:

Shrimp and broccoli quiche is a delicious and easy-to-make dish that is perfect for any occasion. With its flaky crust, creamy filling, and flavorful combination of shrimp and broccoli, this quiche is sure to be a hit. Whether you are serving it for breakfast, lunch, or dinner, this quiche is sure to please everyone at the table.
