HOT AND SOUR TOMATO BROTH WITH SHRIMP

Hot and Sour Tomato Broth With Shrimp image

According to Padma Lakshmi (from Top Chef), this soup will cure what ails you! This is her version of a traditional South Indian soup called rasam. It's high in protein, and low in calories and carbs - although you can add rice noodles and call it a meal! The ingredients can be found inexpensively at an Indian or Asian grocery, and the taste of this fragrant broth is well worth the effort. Cook time = marinating time.

Provided by FLKeysJen

Categories     Clear Soup

Time 40m

Yield 4-6 serving(s)

Number Of Ingredients 17

2 ounces tamarind pulp (2 golf-ball size pieces)
12 ounces shrimp, peeled and deveined
1 lemon, juice of, ripe
salt
1 1/2 tablespoons vegetable oil
3/4 teaspoon black mustard seeds
1/4 teaspoon fenugreek seeds
1/2 teaspoon cumin seed
20 fresh curry leaves
3 garlic cloves, sliced
1/2 teaspoon asafoetida powder
2 cups grape tomatoes or 2 cups cherry tomatoes, halved
1 -2 fresh green chile, minced
1/2 teaspoon curry powder (sambar or Madras)
1/2 inch jaggery (brown cane sugar or palm sugar)
1 tablespoon Thai fish sauce
1/4 cup chopped fresh cilantro

Steps:

  • Soak the tamarind pulp in six cups of very hot water (bring it to a boil and then pour it over the tamarind) for 20 minutes and crush it with the back of a spoon to make a pulp.
  • Marinate the shrimp in lemon juice and a pinch of salt. Set aside in the fridge.
  • In a deep soup pot, heat the vegetable oil on medium heat and add the mustard and cumin seeds, fenugreek, curry leaves and garlic, and cook 3-4 minutes. As soon as the mustard seeds begin to pop and crackle out of the pan, add the asafetida, tomatoes and green chilies. Stir for a couple minutes and then add the curry powder. Be careful as the mustard seeds will pop out of the pan!
  • After about 4-5 minutes, when the tomatoes have started to wilt and become soft, pour in the strained tamarind gravy.
  • Stir in the jaggery piece and the fish sauce, and heat for about 10 minutes. Make sure the jaggery dissolves completely. Adjust salt, if needed. Once the oil begins to separate, and little pools of oil form on the surface, add the shrimp and cook until just opaque, 2 to 3 minutes. Do not overcook the shrimp!
  • Remove from the heat and stir in the cilantro. Serve piping hot in bowls.

MUSSELS, CLAMS AND SHRIMP IN SPICY TOMATO BROTH

Mussels, Clams and Shrimp in Spicy Tomato Broth image

Categories     Bread     Tomato     Clam     Mussel     Shrimp     Simmer     Boil

Yield 6 main-course servings

Number Of Ingredients 11

1/4 cup olive oil
5 garlic cloves, minced
1 bay leaf
1 teaspoon dried crushed red pepper flakes
1 cup dry white wine
1 (28-ounce) can diced tomatoes with juices
24 small littleneck clams (about 2 1/2 pounds total), scrubbed
24 mussels (about 1 1/2 pounds total), debearded
20 large shrimp (about 1 pound), peeled, deveined, and butterflied
1/2 cup torn fresh basil leaves
Warm crusty bread, to serve

Steps:

  • In a large, wide pot, heat the oil over a medium flame. Add the garlic, bay leaf, and red pepper flakes, and sauté until the garlic is tender, about 1 minute. Add the wine and bring to a boil. Add the tomatoes with their juices and simmer, stirring often, until the tomatoes begin to break down and the flavors blend, about 8 minutes. Stir in the clams, then cover and cook for 5 minutes. Stir in the mussels, then cover and continue cooking until the clams and mussels open, about 5 minutes longer.
  • Using tongs, transfer the opened shellfish to serving bowls (discard any shellfish that do not open). Add the shrimp to the simmering tomato broth, and simmer until the shrimp are just cooked through, about 1 1/2 minutes. Stir in the basil. Remove the bay leaf. Divide the shrimp and tomato broth among the bowls, and serve with the warm bread.

Tips:

  • Mise en place: Before you start cooking, make sure you have all of your ingredients prepped and measured out. This will help you stay organized and avoid scrambling during the cooking process.
  • Choose fresh, high-quality ingredients: The better the ingredients, the better the dish will taste. Look for shrimp that are firm and have a briny smell, and fingerling potatoes that are small and smooth.
  • Don't overcrowd the pan: When searing the shrimp and potatoes, make sure to give them enough space in the pan so that they can cook evenly. If you overcrowd the pan, the food will steam instead of sear.
  • Be patient when cooking the tomatoes: The tomatoes need to cook slowly in order to develop their full flavor. Don't rush the process, or the tomatoes will be sour and acidic.
  • Season to taste: Be sure to taste the dish throughout the cooking process and adjust the seasoning as needed. You may need to add more salt, pepper, or herbs to taste.

Conclusion:

Shrimp and fingerlings in tomato broth is a delicious and easy-to-make dish that is perfect for any occasion. The combination of shrimp, potatoes, and tomatoes creates a flavorful and satisfying meal that is sure to please everyone at the table. Be sure to follow the tips above to ensure that your dish turns out perfectly.
