Yield 4 to 6 servings

Number Of Ingredients 14

1 pound large shrimp, peeled and deveined, shells reserved
4 cups seafood stock
3 tablespoons good olive oil
2 cups chopped leeks, white and light green parts (3 leeks)
1 tablespoon chopped garlic (3 cloves)
Pinch cayenne pepper
1/4 cup Cognac or brandy
1/4 cup dry sherry
4 tablespoons (1/2 stick) unsalted butter
1/4 cup all-purpose flour
2 cups half-and-half
1/3 cup tomato paste
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Place the shrimp shells and seafood stock in a saucepan and simmer for 15 minutes. Strain and reserve the stock. Add enough water to make 3 3/4 cups. Meanwhile, heat the olive oil in a large pot or Dutch oven. Add the leeks and cook them for 10 minutes over medium-low heat, or until the leeks are tender but not browned. Add the garlic and cook 1 more minute. Add the cayenne pepper and shrimp and cook over medium to low heat for 3 minutes, stirring occasionally. Add the Cognac and cook for 1 minute, then the sherry and cook for 3 minutes longer. Transfer the shrimp and leeks to a food processor fitted with a steel blade and process until coarsely pureed. In the same pot, melt the butter. Add the flour and cook over medium-low heat for 1 minute, stirring with a wooden spoon. Add the half-and-half and cook, stirring with a whisk, until thickened, about 3 minutes. Stir in the pureed shrimp, the stock, tomato paste, salt, and pepper and heat gently until hot but not boiling. Season, to taste, and serve hot. ;

Emeril's BBQ Shrimp image

I made this recipe many years ago after seeing it on Emeril's show. The flavour is out of this world.

Provided by Gardening Girl

Time 1h30m

Yield 2 Cups, 4 serving(s)

Number Of Ingredients 15

2 lbs shrimp, in their shells medium large about 42
2 tablespoons Emeril's Original Essence
1 teaspoon fresh ground black pepper
2 tablespoons olive oil
1/4 cup onion, chopped
2 tablespoons garlic, minced
3 bay leaves
3 lemons, peeled and sectioned
2 cups water
1/2 cup Worcestershire sauce
1/4 cup wine (dry white)
1/4 teaspoon salt
2 cups heavy cream
2 tablespoons butter
chives, chopped

Steps:

  • Peel the shrimp, leaving only their tails attached. (I use zipper back shrimp).
  • Reserve the shells, sprinkle the shrimp with 1 tablespoon of the Essence, and half teaspoon of the black pepper. Use you hands to coat the shrimp with the seasonings. Refrigerate the shrimp while you make the sauce base.
  • Heat 1 tablespoon of the oil in a large pot over high heat. Add the onions and garlic, and cook, stirring, for 1 minute. Add the reserved shrimp shells, the remaining Essence, the bay leaves, lemons, water, Worcestershire, wine, salt, and the remaining black pepper. Stir well and bring to a boil. Reduce the heat and simmer for 30 minutes.
  • Remove from the heat, allow to cool for about 15 minutes, and strain into a small saucepan. There should be about 1 1/2 cups. Place over high heat, bring to a boil, and cook until thick, syrupy, and dark brown, for about 15 minutes. Makes about 4 to 5 tablespoons of the sauce base.
  • Heat the remaining 1 tablespoon of oil in a large skillet over high heat. When the oil is hot, add the seasoned shrimp and cook, occasionally shaking the skillet, for 2 minutes. Add the cream and all of the sauce base. Stir and simmer for 3 minutes.
  • Transfer the shrimp to a warm platter with tongs and whisk the butter into the sauce. Remove from the heat. Makes about 2 cups. Mound the shrimp in the center of a platter. Spoon the sauce over the shrimp over rice. Garnish with chopped chives.

Tips:

  • Use fresh shrimp for the best flavor. Frozen shrimp can be used, but fresh shrimp will give your bisque a more intense shrimp flavor.
  • Don't overcrowd the pan when cooking the shrimp. If you overcrowd the pan, the shrimp will steam instead of sear, and you'll end up with tough, rubbery shrimp.
  • Cook the shrimp until they are just opaque. Overcooked shrimp will be tough and chewy.
  • Use a good quality shrimp stock. The shrimp stock is the base of the bisque, so it's important to use a good quality stock. You can make your own shrimp stock, or you can use a store-bought stock.
  • Add vegetables to the bisque for extra flavor and nutrition. Vegetables such as carrots, celery, and onions are all good additions to shrimp bisque.
  • Season the bisque to taste. Add salt, pepper, and other seasonings to taste. You can also add a splash of white wine or cognac for extra flavor.
  • Serve the bisque immediately. Shrimp bisque is best served hot, so serve it immediately after it's made.

Conclusion:

Shrimp bisque is a delicious and easy-to-make soup that is perfect for a special occasion or a weeknight meal. With its rich, creamy flavor and tender shrimp, shrimp bisque is sure to please everyone at the table. So next time you're looking for a delicious and satisfying soup, give shrimp bisque a try!
