Time 20m

Number Of Ingredients 12

1 pound uncooked large shrimp (peeled and deveined )
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/8 teaspoon cayenne pepper
3 tablespoons unsalted butter (divided)
1 small shallot (minced)
1/2 cup dry white wine (or low-sodium chicken stock or broth)
4 cloves garlic (minced)
1 small lemon
1 tablespoon chopped fresh rosemary or thyme (optional but definitely worthwhile!)
1/4 cup chopped fresh parsley
cooked rice, (or pasta, grits, or toasted bread (for serving))

Steps:

  • Pat the shrimp dry with paper towels and place in a large bowl.
  • Sprinkle with salt, black pepper, and cayenne pepper. Toss to coat.
  • Heat 2 tablespoons of butter in a large skillet over medium heat until it melts. Add the shallot and let cook for 1 to 2 minutes, until it just begins to soften. Add the shrimp in a single layer and let cook undisturbed for 1 minute. With tongs or a wide spatula, turn over the shrimp.
  • Add the wine and garlic. Cook until the shrimp are no longer translucent and the wine has reduced by half, about 2 to 3 minutes more.
  • Remove the skillet from the heat. Stir in the remaining 1 tablespoon of butter. Zest the lemon directly over the skillet, then cut the lemon in half. Juice half of the lemon over the top and slice the other half into wedges for serving. Add the rosemary and parsley, then toss to combine. Serve immediately with lemon wedges.

This is something I threw together one day for lunch and it turned out wonderful. I used what I had on hand but I can imagine adding fresh diced tomatoes or even some veggies to this and it still being great. This is defiantly NOT diet food but hey, we all need to splurge once in awhile! Serving and prep time are estimates because I had a large appetite that day and I was in a hurry so I did not pay attention to how long it took to prepare.

SHRIMP OR SCALLOPS IN GARLIC BUTTER

Shrimp or Scallops in Garlic Butter image

This dish is really quick, and easy to prepare, but its filled with terrific, rich flavor. I've made it with both the shrimp and the scallops, and both worked very well.

Provided by Kozmic Blues

Categories     Very Low Carbs

Time 10m

Yield 4 serving(s)

Number Of Ingredients 6

1 lb peeled and deveined shrimp or 1 lb sea scallops, your choice
3 tablespoons butter
1 small shallot, finely minced
3 cloves garlic, mashed into a paste (or finely minced)
2 tablespoons sherry wine
2 tablespoons fresh minced parsley, for garnish

Steps:

  • In a large skillet, heat butter over medium high heat.
  • When butter begins to foam, add the garlic paste and shallot and saute for a minute or two, to soften a bit.
  • Add the seafood of your choice: For the shrimp, saute for 2-3 minutes or until shrimp turn pink.
  • For the scallops, saute 3-5 minutes, or until scallops turn opaque.
  • Once the seafood is cooked through, remove to a plate and cover.
  • Add the sherry to the melted butter and warm through for about a minute or two.
  • Pour sauce over seafood, top with parsley, and serve.

Tips:

  • Use large shrimp: They will be easier to peel and devein, and they will cook more evenly.
  • Peel and devein the shrimp before cooking: This will help to remove any impurities and make the shrimp more flavorful.
  • Use a large skillet: This will help to prevent the shrimp from overcrowding and ensure that they cook evenly.
  • Use high heat: This will help to sear the shrimp and lock in their flavor.
  • Do not overcook the shrimp: Overcooked shrimp will be tough and rubbery. Cook them for just a few minutes per side, or until they are pink and opaque.
  • Use fresh ingredients: Fresh garlic, butter, and parsley will give the shrimp the best flavor.
  • Serve immediately: Shrimp is best served immediately after it is cooked. Garnish with fresh parsley or lemon wedges.

Conclusion:

Shrimp in garlic butter is a quick, easy, and delicious dish that can be enjoyed by people of all ages. It is perfect for a weeknight dinner or a special occasion. With a few simple ingredients and a little bit of time, you can create a dish that is sure to impress your family and friends.
