SEAFOOD STEW WITH SHRIMP AND LOBSTER



Seafood Stew with Shrimp and Lobster image

Here is a yummy seafood stew ever reminiscent of that served in the fine restaurants of the Mediterranean city of Alexandria.

2 Roma tomatoes, washed, dried, diced
1 cup parsley leaves, washed, dried, stems removed
2 cups baby kale
2 green onions, washed, dried, chopped
1/2 red onions, roughly chopped
3 large garlic cloves, chopped, divided
1 lb raw large shrimp or prawns, peeled, deveined, tail on
2 lemons, juice of, divided
4 cups water
1 bay leaf
1/2 tsp dried minced ginger
Salt and pepper
1 lb lobster tail (about two lobster tails, 8 oz. each)
Olive oil
1 tsp crushed red pepper
1 tsp ground coriander
2 15-oz cans chicken broth
1/2 cup dry white wine

Steps:

  • Prepare the tomatoes, parsley, kale, onions and garlic as mentioned above. Set aside.
  • Season shrimp with a little salt, pepper and juice of 1/2 lemon. Place in the fridge briefly.
  • Boil four cups of water seasoned with bay leaf, one chopped garlic clove,dry minced ginger, salt and pepper.
  • Add the lobster tails to the boiling water. Turn heat to medium-high; cover and let cook for three more minutes or until lobster shells turn bright pink. Remove the lobster from its broth and set aside to cool. Keep lobster broth to use later.
  • Once cool enough to handle, cut lobster shell down the middle with a pair of kitchen scissors. Remove the lobster tails from their shells and chop into bite-size chunks.
  • In a large pot, heat two tbsp of olive oil on medium-high heat. Saute the red onions with crushed red pepper flakes. To that, add the remaining chopped garlic. Toss together briefly then add the chopped tomatoes, salt, pepper and coriander.
  • Add white wine and cook to reduce.
  • Into the same pot, using a mesh colander, pour in lobster broth. Follow with the chicken broth and remaining lemon juice.
  • Let broth come to a high simmer, then add the shrimp. One minute later, add chunks of cooked lobster.
  • Now stir in fresh baby kale, chopped green onions, parsley leaves. Remove from heat.
  • Let sit covered for five brief minutes.
  • Divide into four serving bowls. Serve with French style bread. Enjoy!

1 tablespoon olive oil
3 medium onions, chopped
6 garlic cloves, chopped
28 ounces tomatoes, diced
1/4 cup dry red wine
2 teaspoons oregano, dried
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon salt
1/4 teaspoon sugar
1/4 teaspoon black pepper
1/2 lb lobster tail
1 lb large shrimp, peeled and deveined
3/4 lb linguine
1/4 cup fresh parsley, chopped

Steps:

  • Heat oil in a very large nonstick skilled over medium heat, then add onions and garlic. Saute 10 minutes until golden.
  • Add tomatoes, wine, spices; bring to a boil. Reduce heat and simmer, uncovered, for 15 minutes or till flavors are blended and sauce is slightly thickened.
  • Cut lobster into 1/2" pieces. Add lobster and shrimp to sauce and simmer, uncovered, 5 minutes until just opaque.
  • Cook linguine, drain and place in a large serving bowl. Toss at once with sauce and sprinkle with parsley.

1/4 cup all-purpose flour

2 red and/or green bell peppers, chopped
1 onion, chopped
One 15-ounce can diced tomatoes
One 8-ounce bottle clam juice
2 pounds peeled and deveined large shrimp (21 to 25 shrimp)
2 tablespoons chopped fresh parsley
Kosher salt

Steps:

  • Heat the oil in a large Dutch oven over medium-high heat. Add the sausage and cook, stirring occasionally, until browned, about 5 minutes. Sprinkle the flour over the sausage and cook, stirring, until lightly toasted and the meat is well coated, about 2 minutes. Add the cayenne, garlic, bell peppers and onion and continue to cook, stirring occasionally, until the vegetables are softened, about 5 minutes. Add the tomatoes with their juices, clam juice and 4 cups water, scraping up any browned bits from the bottom of the pot.
  • Bring the stew to a simmer and continue to cook, adjusting the heat as needed to maintain a simmer, until the stew is thickened, about 30 minutes. Stir in the shrimp and cook until opaque, about 5 minutes. Remove from the heat and stir in the parsley. Season with salt.

1 egg white
2 teaspoons plus 1 tablespoon cornstarch
1 1/2 teaspoons salt
1 tablespoon Asian sesame oil
3/4 teaspoon freshly ground white pepper
1 pound medium shrimp, shelled and deveined
1 1/2 tablespoons minced fresh ginger
2 teaspoons finely chopped garlic
1 1/2 tablespoons coarsely chopped Chinese fermented black beans
1 1/2 tablespoons rice wine or dry sherry
1 tablespoon light (thin) soy sauce
2 teaspoons dark soy sauce
2 teaspoons sugar
1/2 cup low-salt chicken broth
1 1/2 tablespoons peanut oil
1/2 pound fatty ground pork
1 egg, beaten
2 tablespoons finely chopped scallions

Steps:

  • Combine the egg white, the 2 teaspoons cornstarch, 1 teaspoon of the salt, 1 teaspoon of the sesame oil and 1/2 teaspoon of the white pepper in a bowl. Rinse and dry the shrimp, add them to the bowl and mix. Refrigerate for 20 minutes.
  • Bring 2 cups water to a boil. Remove from heat, add the shrimp mixture and stir vigorously to separate them. When the shrimp turn white, in about 2 minutes, drain them in a colander; discard the liquid.
  • Dissolve the remaining cornstarch in 2 tablespoons cold water, and set aside. Combine the ginger, garlic and black beans in a dish. In another dish, combine the wine, soy sauces, sugar, broth and the remaining salt, sesame oil and white pepper.
  • Place a wok or skillet over high heat. When it is hot, add the peanut oil, and when it starts to smoke, toss in the ginger mixture, and stir-fry for 30 seconds. Add the pork and stir-fry, breaking it up, until it loses its pinkness, about 2 minutes. Add the wine mixture, and bring to a simmer. Stir in the dissolved cornstarch, then fold in the shrimp, cooking everything for about 1 minute. Slowly pour in the beaten egg in a thin stream. When it starts to set, transfer the food to a warm serving dish.
  • Garnish with scallions, and serve.

This is my cover-band take on a dish served one spring at the restaurant Joe Beef in Montreal, which paired an enormous quantity of chilled steamed Canadian shrimp, bright and sweet, with a tureen of lobster butter. It was a dark and clouded sauce, slightly yellow, slightly green. We dipped and ate - sweet shrimp meat against deep salinity and velvet sauciness - and it was like hearing a hit song for the very first time, addictive from the start. We dipped everything in lobster butter that night. We're still at it now.

Steps:

  • Place the shrimp in a large saucepan. Add enough cold water to cover them. Turn the heat to high, and bring the water to a boil. Cover the pan, remove it from the heat and let the shrimp sit for 8 to 10 minutes.
  • Drain the shrimp carefully, then place in a large shallow bowl and chill completely. (You can speed the process by placing the shrimp in an ice bath for 10 minutes or so.) Serve with warm lobster butter.

1 pound ground pork
