1 cup Mexican red sauce
12 large shrimp, peeled and deveined
2 tablespoons olive oil
1 large onion, chopped into chunks
1 green bell pepper, chopped into chunks
1 red bell pepper, chopped into chunks
Butter, for cooking tortillas
6 flour tortillas
2 cups grated cheese (Monterey Jack is best)
Sour cream, for serving
Fresh cilantro leaves, for serving
Lime wedges, for serving

Steps:

  • On a large plate, pour the red sauce over the shrimp and set aside.
  • Heat a skillet over high heat and add the olive oil. Cook the onions and bell peppers over high heat until they start to get nicely browned. Remove from the skillet and set aside.
  • Add the shrimp with the sauce. Cook, stirring only occasionally, until the shrimp are opaque. Add in a little water if the sauce gets dry. Remove from the skillet and chop the shrimp into bite-size pieces.
  • In a clean skillet, heat some butter. Place a tortilla in the skillet, then layer on the ingredients: cheese, vegetables and shrimp. Top with a little more cheese and a second tortilla. Cook on both sides, adding butter before flipping to the other side so the tortilla isn't overly dry. Remove from the skillet and slice into wedges. Repeat with the rest of the tortillas and filling ingredients.

1/2 cup cooked black beans
1 cup cooked white or brown rice
1 lb shrimp, shelled and cleaned
2 tablespoons olive oil
1 tablespoon cajun seasoning
1 tablespoon creole seasoning
1/2 tablespoon brown sugar
1 teaspoon paprika
1 teaspoon pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon dried thyme
2 tablespoons soy sauce
1 large red bell pepper, sliced or chopped
2 whole andouille sausage, sliced and halved again into half circles (optional)
8 oz sharp cheddar cheese, shredded
1/4 cup pickled jalapeños (optional)
1 cup guacamole
1/4 cup fresh parsley or cilantro
4 large flour tortillas

Steps:

  • Toss the black beans with the rice. Set aside.
  • Heat a medium skillet over medium heat. In a bowl toss the shrimp with 1 tablespoon olive oil, cajun seasoning, creole seasoning, brown sugar, paprika, pepper, cayenne pepper, thyme and soy sauce. Set aside.
  • Add the 1 tablespoon olive oil to the skillet. Add the red pepper and saute for 3-5 minutes or until soft. Remove the pepper from the skillet and set aside.
  • Add the shrimp and any sauce that is in the bowl with the shrimp to a skillet in a single layer and sear for 3-4 minutes, flip and sear another 3 minutes. Add the andouille sausage if using and continue to cook another 3 minutes or until warmed through. Try not to over cook the shrimp as it will continue to cook in the quesadillas.
  • To assemble and cook the quesadillas, heat an electric griddle or skillet over medium heat. Add a bit of olive oil. Lay a tortilla flat on a cutting board and cover one half of the tortilla with a bit of the cheese, then evenly distribute the rice and beans on top. Add the red peppers, shrimp and sausage. Then add the pickled jalapeños and sprinkle with a little more cheese. Fold the empty half of the tortilla over the filling. Repeat with the remaining tortillas. Working with one or two at a time, place the quesadillas in the skillet and cook until the bottom is crispy and golden brown, then gently flip and cook for another 2-3 minutes until crispy and golden. Repeat with the remaining quesadillas. Serve with guacamole and fresh cilantro or parsley.

1 lime, juiced
A couple pinches salt
1/4 cup sour cream, 3 rounded tablespoonfuls
2 chipotle peppers in adobo, available in cans on specialty food aisle in Mexican section
1/2 pound chorizo sausage, sliced thin on an angle
1 tablespoon extra virgin olive oil, plus some for drizzling
1 clove garlic, cracked away from skin and crushed
12 large shrimp, peeled and deveined, tails removed, ask for easy-peels at fish counter
Salt and freshly ground black pepper
4 (12- inch) flour tortillas
1/2 pound, 2 cups, shredded pepper Jack cheese

Steps:

  • Cut avocados all the way around with a sharp knife. Scoop out the pit, then spoon avocado flesh away from skin into a food processor. Add the juice of 1 lime, a couple of pinches salt, sour cream and chipotles in adobo. Pulse guacamole until smooth. Transfer to a serving bowl.
  • Heat a 12-inch nonstick skillet over medium high heat. Brown chorizo 2 to 3 minutes, then remove from pan. Add oil, garlic, then shrimp. Season shrimp with salt and pepper and cook shrimp until pink, 2 or 3 minutes. Transfer shrimp to a cutting board and coarsely chop.

Six 16-20 count unpeeled shrimp, deveined
Olive oil, for drizzling
Kosher salt and freshly ground black pepper
2 tablespoons mayonnaise
2 large flour tortillas
1/4 cup chopped roasted red pepper
1/4 cup chopped fresh cilantro leaves

Steps:

  • Place cheese in freezer for around 45 minutes.
  • Meanwhile, preheat oven to 400 degrees F.
  • Drizzle shrimp with olive oil in a large bowl. Sprinkle with salt and pepper and toss to coat. Spread on a baking sheet and bake, rotating once, until just cooked through, 7 to 9 minutes.

2 cups shredded Monterey Jack cheese with jalapeño peppers (8 ounces)
1 large tomato, chopped (1 cup)
1/2 cup real bacon pieces (from 2-ounce jar)
1 package (4 ounces) frozen cooked salad shrimp, rinsed and thawed

Steps:

  • Heat 10-inch nonstick skillet over medium-high heat. Place 1 tortilla in skillet. Sprinkle with 1/4 cup of the cheese, 1/4 cup of the tomato, 2 tablespoons of the bacon and 1/4 of the shrimp. Sprinkle with additional 1/4 cup of the cheese. Top with another tortilla.

5 (10 inch) flour tortillas

Steps:

  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add bell pepper, scallions, cumin, and chipotle powder.
