Lemony Shrimp and Bean Stew image

With minimal prep and a quick cook time, this shrimp stew feels elegant for such an easy weeknight meal. You can also take the dish in a number of directions: Substitute the shrimp with an equal amount of flaky white fish or even seared scallops, or stretch the dish into a meal for six by stirring in some butter and serving over cooked spaghetti or rigatoni. A good glug of your best olive oil would also be a welcome.

3 tablespoons unsalted butter
1 large shallot, finely chopped (1/2 cup)
2 pounds green beans, trimmed
1/2 cup dry white wine
2 tablespoons coarsely chopped fresh tarragon, plus sprigs for garnish
Kosher salt and freshly ground pepper

Tips:

  • Mise en place: Before you start cooking, ensure you have all the ingredients and equipment ready. This will ensure that the cooking process is smooth and efficient.
  • Choose fresh and high-quality ingredients: The quality of your ingredients will significantly impact the final dish. Use fresh shrimp, green beans, and peas for the best flavor and texture.
  • Do not overcook the shrimp: Shrimp cooks quickly, so it is essential not to overcook it. Otherwise, it will become tough and rubbery. Cook the shrimp for 2-3 minutes or until it turns pink and opaque.
  • Use a large skillet: A large skillet will ensure that the shrimp, green beans, and peas have enough space to cook evenly.
  • Season to taste: Adjust the amount of salt, pepper, and lemon juice to your preference. Taste the dish as you cook and add more seasonings if needed.
  • Serve immediately: This dish is best served immediately after cooking. The shrimp, green beans, and peas will be at their best when they are still hot and tender.
