Time 22m

Yield 4 serving(s)

Number Of Ingredients 14

2 teaspoons cornstarch
2 tablespoons rice vinegar, unseasoned (to taste)
3/4 cup chicken broth, low salt
1/4 tablespoon soy sauce
1 tablespoon ketchup
1 1/2 lbs cod fish fillets, thick (often called "cod loins", cut into 4 uniform pieces)
1/2 teaspoon salt, kosher, to taste
1/2 teaspoon black pepper, to taste
1/2 cup cornstarch
2 eggs, beaten
3 tablespoons canola oil (or peanut oil)
10 dried thail chilies or 10 other small whole chilies
4 scallions, thinly sliced, white and green parts separated
1 1/2 tablespoons ginger, minced

Steps:

  • In a small bowl, mix the 2 tsp corn starch with the 2 Tbsp rice vinegar.
  • Add the chicken broth, soy sauce, and ketchup.
  • Season the fish with 1/2 tsp salt and 1/2 tsp pepper.
  • Spread the 1/2 cup of corn starch on a wide plate.
  • Put the eggs in a bowl wide enough to dip the largest pice of cod.
  • Dredge the fish in the corn starch.
  • Heat 2 Tbsp of oil in a 12 inch non-stick pan over medium high heat until shimmering.
  • Move each piece of cod from the corn starch to the egg to coat, then put into the pan.
  • Cook on the first side for 3 minutes, then turning the fish, until brown on all sides and a little firm to the touch (total cooking time will be about 5 minutes) -- it should NOT be cooked all the way through.
  • Transfer the fish to a large plate.
  • Add the remaining 1 Tbsp of oil to the pan, let it warm up, then add the chiles, the white parts of the scallion, and the ginger. Stir fry for 2 ;minutes, until the scallions become translucent, with some brown spots.
  • Stir the corn starch and vinegar mixture, then pour it into the pan and stir. The sauce should come to a boil and thicken.
  • Reduce the heat to medium low, return the fish to the pan, and flip it to coat all the pieces uniformly with sauce. Cover the pan, with the lid slightly ajar, and cook for 3-5 minutes, until the fish is cooked fully and starting to flake.
  • Taste the sauce and re-season with salt and pepper if necessary.
  • Put the fish on a serving plate (or individual plates) and garnish with the scallion greens.

Number Of Ingredients 10

3 cups cooked chickpeas (see Note) or 2 15-ounce cans
6 or 7 large garlic cloves, peeled and sliced
4 or 5 hot peppers or 1 teaspoon red-pepper flakes
6 tablespoons olive oil
1/2 teaspoon toasted cumin seeds, ground
2 pounds cod fillets, about 1 inch thick
salt
freshly ground black pepper
cilantro or parsley sprigs
lemon wedges

  • If canned chickpeas are used, rinse and drain them. Combine the cooked or canned chickpeas in a saucepan with the garlic, peppers or flakes, 3 tablespoons of the olive oil, and 1/4 cup of water. Bring the liquid to a simmer, cover the pot, and simmer for 20 minutes.
  • Preheat the oven to 400 degrees.
  • Remove and discard the whole peppers, if you used them. Add the cumin to the chickpeas and spread half the mixture in the bottom of a 9-inch-square baking dish. QUICK-BRAISED COD WITH HERBED YOGURT

Quick-Braised Cod With Herbed Yogurt image

In this blissfully easy weeknight dinner, cod and shallots are braised in butter and wine, then topped with an herbed, garlicky yogurt sauce. It's fast, flavorful and comforting, especially when served with mashed potatoes to drink up the pan juices. You can substitute any other mild-fleshed fish for the cod. Hake, sea bass, flounder and porgy all work nicely, though you may have to adjust the cooking time, depending on the thickness of the fillets.

Time 20m

Yield 4 servings

Number Of Ingredients 11

4 cod or hake fillets (6 to 8 ounces each)
Salt and freshly ground black pepper, to taste
2 tablespoons unsalted butter
1 tablespoon extra-virgin olive oil, more as needed
1 large shallot or 1/4 of a red onion, thinly sliced
5 sprigs thyme
1/4 cup dry white wine
1/3 cup plain yogurt (see Note)
2 tablespoons minced fresh dill, parsley or cilantro, more for serving
1 small clove garlic, finely grated or minced
Flaky sea salt, for serving (optional)

Steps:

  • Season fish with salt and pepper and set aside.
  • In a large skillet with a lid, melt butter in olive oil over medium heat. Add shallot, thyme and a pinch of salt and pepper and cook until golden, about 3 minutes. Add wine and cook until slightly thickened and shallot is very soft, about 2 minutes longer.
  • Add cod to pan, spoon some of the shallots over top of fish and cover pan. Reduce heat as needed; the liquid should be at a simmer, not a boil. Cook until fillets are just opaque, 2 to 4 minutes.
  • Meanwhile, in a small bowl mix together yogurt, dill, garlic, and salt and pepper to taste.
  • Serve the cod immediately, topped with shallots, yogurt sauce and dill. Drizzle everything with a little more olive oil, and sprinkle with flaky salt and more pepper.

Tips:

  • Choose the freshest cod you can find. Fresh cod should have a mild, slightly sweet smell and firm, white flesh. Avoid fish that smells fishy or has a slimy texture.
  • Use a heavy-bottomed pot or Dutch oven. This will help to evenly distribute the heat and prevent the fish from sticking.
  • Don't overcrowd the pot. If you're cooking a lot of fish, cook it in batches so that each piece has enough room to brown.
  • Use a flavorful braising liquid. The braising liquid is what will give the fish its flavor, so make sure to use a flavorful combination of ingredients. Some good options include:
    • Soy sauce
    • Rice wine
    • Ginger
    • Garlic
    • Sichuan peppercorns
    • Brown sugar
  • Cook the fish until it is tender and flaky. The cooking time will vary depending on the thickness of the fish, but it should be cooked through in about 10-15 minutes.
  • Serve the fish immediately. Sichuan braised cod is best served hot, with rice or noodles.

Conclusion:

Sichuan braised cod is a delicious and easy-to-make dish that is perfect for a weeknight meal. The fish is tender and flaky, and the sauce is flavorful and complex. Serve it with rice or noodles, and you'll have a meal that the whole family will love.
