SICILIAN MEAT ROLL
MY SISTER-IN-LAW shared this recipe years ago and it became our family's favorite meat loaf. The addition of ham and mozzarella is a colorful surprise and adds terrific flavor. This is always a big hit with company, and the leftovers are good either hot or cold. -Mrs. W. G. Dougherty, Crawfordsville, Indiana

Steps:
- In a medium bowl, combine the bread crumbs, pecorino Romano, ½ cup (20 g) chopped basil, provolone, parsley, 5 minced cloves of garlic, salt, pepper, and the olive oil. Stir and set aside.
- Lay the flank steak on a cutting board. Season both sides with salt and pepper. Cover the the meat with a sheet of parchment paper. Using a meat mallet or rolling pin, pound the steak until it's ¼ inch (6 mm) thick.
- Remove the parchment and sprinkle the bread crumb mixture evenly over the steak.
- Starting from the bottom, roll the meat into a log. Using butcher's twine, tie up the roll so it holds its shape while cooking. Season with salt and pepper.
- Heat the canola oil in a large Dutch oven over high heat. When the oil is shimmering, add the steak roll and, without moving it, cook until a dark brown crust forms on one side, about 3 minutes. Turn the roll and repeat until all sides and the ends have been seared. Remove the roll from the pan and set aside.
- Preheat the oven to 350°F (180°C).
- Add the butter, carrot, onion, celery, remaining 3 cloves of garlic, salt, and pepper to the pan and cook until caramelized, about 5 minutes.
- Add the white wine and stir to loosen any brown bits from the bottom of the pot. Cook until the wine reduces and the pan is slightly dry again.
- Add the tomatoes, bay leaves, oregano, and red pepper flakes. Stir to combine.
- Return the beef roll to the pot. Cover and bake for 1 hour, flipping the roll halfway through (if the sauce is drying up too much, add more crushed tomatoes or water), until the beef is tender.
- Slice the braciole and arrange on a serving platter with the sauce. Serve the braciole with orecchiette or polenta. Garnish with grated pecorino Romano and fresh basil.
- Enjoy!

Steps:
- Preheat oven to 450°F. Put water on to boil for your pasta. Mix meat and next 10 ingredients as if you were making meatloaf. Flatten meat out on a waxed paper lined cookie sheet into a thin layer: 1/2-inch thick, 12 inches long by 6-8 inches wide. Cover meat with arugula or spinach, prosciutto and cheese then roll the meat, using the waxed paper to help roll up into a large log, , working across the 6 to 8-inch side, resulting in a 12-inch long log. Drizzle the log with EVOO to coat lightly. Roast meatroll 20 minutes. Cut into 1-inch slices, 3 pieces per portion, and serve. Make pasta while meat is in the oven. Salt water and cook off pasta, about 7-8 minutes to al dente, with a bite to it. Drain and return pasta to hot pot. While pasta cooks, place broccolini in 1-inch of water in a sauce pot and bring up to a boil. Add salt to the water and add the trimmed broccolini. Cover and cook 5 minutes, drain and reserve. To hot, cooked pasta add a drizzle of EVOO, butter, ricotta, lemon zest, thyme, broccolini and season with salt and pepper. Toss pasta to coat it in the cheese and butter. Season it with salt, to your taste. Portion pasta onto dinner plates alongside meat roll slices and top pasta with tomatoes and freshly ground pepper.

Steps:
- Heat oil in a small stockpot on medium heat. Add onion and saute until brown. Remove the onion from oil and add tomatoes, basil and pepper to taste. Bring to a boil over medium heat for 10 minutes and then simmer over low heat until reduced. The oil should separate from tomatoes and float to the top (about 45 to 60 minutes). Add salt but only when the sauce is almost done.
- In a bowl, mix sausage, garlic, parsley, and pepper until well blended. Set aside. Cut beef into thin slices and flatten with mallet until very thin, and meat slice is about as big as your hand. Place a tablespoon of sausage mixture in the middle and roll up the beef. Secure with a toothpick. Heat pan with olive oil and saute brasciole until well browned. Transfer to tomato sauce and reduce to a simmer. Continue to cook tomato sauce with brasciole until sauce is done, when oil separates from the tomato sauce and floats to the top.
- Place flour in a mound onto a work surface, and make a well or hollow in the center. Crack eggs into the well, and whisk them slightly. With hands or fork, gradually draw some of the flour into the eggs until the eggs are no longer runny. Gently draw the sides of the mound into the egg mixture, and when eggs are soaked up by the flour, begin working the mixture into a dough. Knead the dough using the heel of your palm for about 8 to 10 minutes. Use water as needed until a smooth, integrated mixture is achieved. Let dough rest for at least 20 minutes. Using a pasta machine or wooden dowel, roll out dough and make into desired shape. Gently drop into a large pot of boiling water, and cook for 2 to 3 minutes.
- Serve Brasciole over fettuccine.

This is a lightened version of a meatloaf called a Sicilian Meat Roll. It is topped with cheese instead of sauce, but is very well seasoned. My family loves this version but I misplaced my recipe so we haven't had it for awhile. Thought I better post it on here for safe keeping!

Tips:
- For the meatloaf, use a combination of ground beef and pork for a flavorful and moist result.
- Make sure to soak the bread in milk before adding it to the meatloaf mixture. This will help to bind the mixture together and prevent it from becoming dry.
- Don't overmix the meatloaf mixture. Overmixing can make the meatloaf tough.
- When cooking the meatloaf, place it in a baking dish with a little bit of water in the bottom. This will help to keep the meatloaf moist.
- For the brasciole roll-ups, use thin slices of flank steak or skirt steak. This will make them easier to roll up.
- Pound the steak slices with a meat mallet to tenderize them before rolling them up.
- Fill the brasciole roll-ups with a mixture of bread crumbs, cheese, herbs, and spices.
- Brown the brasciole roll-ups in a skillet before simmering them in a tomato sauce.
- For the pasta, use a short pasta shape such as penne or rigatoni. This will help to hold the sauce better.
- Cook the pasta al dente according to the package directions.
- For the broccolini, blanch it in boiling water for a few minutes until it is tender-crisp.
- Toss the broccolini with olive oil, garlic, and red pepper flakes.
- Serve the meatloaf, brasciole roll-ups, pasta, and broccolini with a side of ricotta cheese.
Conclusion:
This Sicilian stick-to-your-ribs meal is a hearty and flavorful feast that is perfect for a special occasion or a casual weeknight dinner. The meatloaf is moist and flavorful, the brasciole roll-ups are savory and satisfying, the pasta is cooked to perfection, and the broccolini is a delicious and healthy side dish.
