1 cup packed brown sugar
1/4 cup sugar
1 large egg, room temperature
2 tablespoons honey
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/4 teaspoon salt
1-1/2 cups quick-cooking oats
1-1/4 cups Rice Krispies
1 cup chopped nuts
Optional: Raisins or semisweet chocolate chips (1 cup each)

Steps:

  • Preheat oven to 350°. Cream butter and sugars until light and fluffy, 5-7 minutes. Beat in egg, honey and vanilla. Whisk together flour, cinnamon, baking powder and salt; gradually beat into creamed mixture. 1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon vanilla extract
⅔ cup butter, softened
½ cup honey
⅓ cup packed brown sugar
2 cups miniature semisweet chocolate chips

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease one 9x13 inch pan.

1 1/2 cups baking mix (like Bisquick)
1 1/2 cups rolled oats
1 cup brown sugar, packed
1/2 cup margarine or 1/2 cup butter, softened
1 egg
1/3 cup chocolate chips, raisins, nuts (or a combo)

Steps:

  • Heat oven to 350°F.
  • Mix all ingredients except chocolate chips with fork until moistened (mixture wil be crumbly). Stir in chocolate chips.

1/2 cup (1 stick) unsalted butter, cut into pieces, plus more, softened, for pan
4 1/2 cups old-fashioned (rolled) oats
1/3 cup light-brown sugar
1/4 cup all-purpose flour
1 teaspoon baking soda
1/2 cup coarsely chopped pecans (2 ounces)
1/2 cup golden raisins
1/2 cup semisweet chocolate chips
1/2 cup sunflower seeds
1/2 cup wheat germ
1/2 cup dried apricots (3 1/4 ounces)
1/2 cup honey

Steps:

  • Preheat oven to 325 degrees. Butter a 9-by-13-inch baking pan; line bottom with parchment paper, and butter parchment. Set aside. In a large bowl, mix together the oats, brown sugar, flour, and baking soda. Stir in the pecans, raisins, chocolate chips, sunflower seeds, and wheat germ, and set aside.
  • Place apricots in the bowl of a food processor fitted with the metal blade, and process until smooth, about 60 seconds. Add the butter, and process until smooth. With the machine running, add honey through the feed tube, processing until smooth. Transfer apricot mixture to bowl with oat mixture, and fold until thoroughly combined.
  • Transfer mixture to prepared pan. Using a rubber spatula, press it firmly into bottom and edges of pan, and level the surface. Place in oven, and bake until golden, about 30 minutes. Transfer pan to a wire rack, and let cool completely.
  • Invert onto a baking sheet, and lift to remove pan; peel off parchment paper. Reinvert onto a cutting board, and cut into 24 bars, each about 1 1/4 by 3 inches. Bars can be wrapped in waxed paper and stored in airtight containers at room temperature up to 2 weeks.
