SIMPLE CHICKEN, PEAS, AND NOODLES CASSEROLE
This is how Grandma Carr made chicken and noodle casserole. She always had home made noodles which made it delicious. Packaged noodles work fine, but are not as good, of course.

Steps:
- Cook noodles as package directs. Drain. Set aside. Cook chicken or turkey breast meat at a simmer in water with bouillon cubes, salt, and pepper added until meat is thoroughly cooked. You shoukld have about 1/2 of the water remaining in the pan and it should be a nice broth by now. Cool to lukewarm and chop chicken into large but still bite sized pieces. Return meat to pan with broth. Return chicken and water to the stove and heat to almost boiling.
- Cook onion in butter until tender. Stir in flour to thicken butter and onion mixture. Add this gravy to the chicken and broth, stirring and cooking until thickened. You may need to make more thickening agent to get the desired gravy.
- Stir in noodles and frozen peas. Put mixture into a buttered casserole dish and sprinkle cracker crumbs on top. Bake at 350 degrees for 35 minutes.
Tips:
- Choose the right noodles: For a heartier casserole, use a pasta like penne or macaroni. For a lighter dish, use a thin noodle like angel hair or spaghetti.
- Don't overcook the chicken: The chicken should be cooked through, but not dry. Overcooked chicken will make the casserole tough.
- Use fresh vegetables: Fresh vegetables will give the casserole the best flavor. If you're using frozen vegetables, be sure to thaw them before adding them to the casserole.
- Season the casserole well: Be generous with the salt and pepper. You can also add other seasonings, such as garlic powder, onion powder, or dried herbs.
- Top the casserole with cheese: A layer of cheese on top of the casserole will give it a golden brown crust and a cheesy flavor.
Conclusion:
Chicken, peas, and noodles casserole is a classic comfort food dish that is easy to make and loved by people of all ages. It is a versatile dish that can be customized to your own taste preferences. With a few simple tips, you can make a delicious and satisfying chicken, peas, and noodles casserole that your family and friends will love.
