Time 6h45m

Yield 16

Number Of Ingredients 2

1 gallon 2% milk
1 cup plain yogurt with active cultures

Steps:

  • Pour the milk into a pot and bring to a boil, stirring occasionally to prevent sticking. Reduce heat and simmer, about 10 minutes; do not let it boil over.
  • Remove pot from heat and allow to sit for 30 to 60 minutes. Dip your finger into the milk every once in a while to determine when you can leave your finger in the milk for 10 to 15 seconds without burning. Pour in the yogurt; there is no need to stir.
  • Put the lid on the pot and carefully wrap a blanket around it. Place the wrapped pot in a slightly warm place where it will be undisturbed for 6 to 10 hours; overnight is best. Transfer to the refrigerator to allow the yogurt to continue to thicken.

COUNTRY YOGURT BREAD

Provided by LoveBakedIn

Categories     Yeast Breads

Time 40m

Yield 2 loaves, 20 serving(s)

Number Of Ingredients 8

4 1/2 cups flour
1/3 cup dry milk
2 (1/4 ounce) packages yeast
1 1/2 teaspoons salt
1 1/4 cups water
1/2 cup plain yogurt
3 tablespoons oil
1/4 cup wheat germ (optional)

Steps:

  • The flour amount is approximate, add more or less to form a nice dough.
  • Make the bread dough using your favorite method. I just dump it all in my bread machine and set to the dough cycle. You can also mix the dough using the traditional method of heating the liquid and adding the yeast, proofing, and then mixing in the dry ingredients. If using this method knead about 10 minutes and let the dough rest about 10 minutes.
  • When the dough cycle is complete, place dough onto floured surface and divide into 2 equal pieces.
  • Form into loaves by rolling each piece into a rectangle about 12x10 inches. Starting at short end, roll tightly into a loaf. Tuck ends and pinch seams to seal.
  • Place on greased baking sheet.
  • With a sharp knife, make slashes in the top of the loaves about an inch apart. Brush with egg white.
  • Let rise until double, about one hour.
  • Brush with the egg white again before baking.
  • Bake at 400°F for 30 minutes.

Tips:

  • Choose the Right Yogurt: Use plain, whole-milk yogurt for a richer flavor and texture.
  • Measure Accurately: Use a kitchen scale for precise measurements to ensure the bread turns out perfectly.
  • Don't Overmix the Batter: Overmixing the batter can result in a tough, dense bread. Mix just until the ingredients are combined.
  • Bake at the Right Temperature: Bake the bread at 350°F (175°C) for optimal results. A lower temperature may result in a soggy bread, while a higher temperature may cause the bread to overcook.
  • Check for Doneness: Insert a toothpick into the center of the bread. If it comes out clean, the bread is done. If there is still batter on the toothpick, continue baking for a few more minutes.
  • Let the Bread Cool: Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. This helps to prevent the bread from becoming too moist.

Conclusion:

Yogurt bread is a delicious and versatile bread that can be enjoyed for breakfast, lunch, or dinner. With its moist, tender crumb and tangy flavor, it's sure to become a favorite in your household. Experiment with different yogurt flavors and add-ins to create unique and flavorful variations. Yogurt bread also freezes well, making it a convenient option for busy families. So, next time you're looking for a quick and easy bread recipe, give yogurt bread a try. You won't be disappointed!
