1 cup boiling water
1/2 cup cold water
1/2 cup vodka

Steps:

  • Boil cup of water.
  • Empty jello powder into a large mixing bowl and add the boiling water.

3 limes, 2 juiced and 1 cut into small wedges
2/3 cup seltzer water
One 1/4-ounce package unflavored gelatin (about 2 1/2 teaspoons)
2/3 cup tequila
2 tablespoons orange liqueur
Flaky sea salt, for serving

Steps:

  • Combine the sugar, lime juice and 2/3 cup regular water in a medium microwave-safe bowl. Microwave in 30-second intervals, stirring in between each, until the sugar is dissolved, about 2 minutes. Add the seltzer water to the syrup mixture, sprinkle the gelatin on top and leave it to bloom for 5 minutes.

1 cup tequila
Finely grated zest of 1 lime plus 1/2 cup lime juice
12 large jalapenos (about 4 inches in length, not counting the stem)
2 tablespoons sugar
Pinch kosher salt

Steps:

  • Put 1/4 cup cold water in a small microwave-safe bowl and sprinkle over the gelatin. Let stand for 5 minutes to bloom.
  • Microwave the mixture until the gelatin liquefies, about 20 seconds. Stir to make sure the gelatin is completely dissolved. Combine the tequila and lime juice in a liquid measuring cup and stir in the gelatin mixture.
  • Cut 1/4 inch off the stem end of each jalapeno and use a 1/4-teaspoon measure to scoop out the ribs and seeds from each. 1/2 cup very cold heavy cream
1 1/2 teaspoons confectioners' sugar
1/2 teaspoon mint-flavored liqueur, such as creme de menthe

Steps:

  • Put a medium bowl in the freezer to chill.
  • Sprinkle the gelatin evenly over 1 cup cold water in a medium saucepan. Let sit until the gelatin softens, about 5 minutes. Stir the mixture, and add the mint leaves and granulated sugar. Cook over medium-low heat, stirring gently, until the sugar and gelatin are dissolved completely, about 5 minutes (don't let the mixture come to a boil).
