SIMPLE CUCUMBERS AND ONIONS

Simple Cucumbers and Onions image

My mom always had a bowl of this in the fridge during the summer, and now I do too! My mom sliced her cucumbers and onions in cold salt water for a few hours first, but I usually do not. I do not notice difference when they are not soaked. Instead of peeling the cucumbers completely, I leave a few stripes of green to add color to the salad. Note: Cooking time includes time to chill salad before serving.

Time 2h15m

Yield 6-8 serving(s)

Number Of Ingredients 5

2 -3 medium cucumbers, sliced very thin
1 medium onion, cut in half and thinly sliced
1/3 cup vegetable oil
1/3 cup vinegar
1/2 cup sugar

Steps:

  • Combine oil, vinegar, and sugar in a medium to large bowl (big enough to hold all completed salad). Stir until sugar is dissolved (Note: You can heat the dressing to help keep it from separating. It is not necessary, but I do if I have time. If you heat the dressing, be sure to cool it before adding to cucumbers).
  • Add cucumbers and onions to dressing. Toss to coat veggies.
  • Cover and chill at least 2 hours before serving. The longer it chills, the better it gets!

1 red onion sliced
1/3 cup apple cider vinegar
1/4 cup water
1 tablespoon sugar
salt and pepper (to taste, we used 1 teaspoon for each)
dill (for garnish)

Steps:

  • Slice each cucumber thinly. Then slice them into half-moons.
  • Add sliced cucumbers and red onions to a large bowl.
  • Whisk together the apple cider vinegar, water, sugar, salt, and pepper in a medium mixing bowl to make the vinegar dressing.
  • Pour the vinegar dressing over the cucumber and onion and toss to combine.
  • Top with optional herbs. Store in the fridge until ready to serve.

Tips:

  • Choosing the right cucumbers: For the best results, choose firm, fresh cucumbers that are free of blemishes and bruises. English or Persian cucumbers are ideal for slicing, as they have fewer seeds and a milder flavor.
  • Slicing the cucumbers and onions: For a classic cucumber and onion salad, slice the cucumbers and onions thinly and evenly. You can use a sharp knife or a mandoline slicer for this task. If you want a more rustic look, you can slice the cucumbers and onions into thicker pieces.
  • Soaking the cucumbers and onions (optional): Soaking the cucumbers and onions in cold water for 30 minutes before assembling the salad will help to remove some of the bitterness and make them more crisp.
  • Choosing the right dressing: There are many different dressings that you can use for a cucumber and onion salad. A simple vinaigrette made with olive oil, vinegar, and herbs is a classic choice. You can also use a creamy dressing made with yogurt, mayonnaise, or sour cream. If you are looking for a more flavorful dressing, try a dressing made with Asian ingredients, such as soy sauce, rice vinegar, and sesame oil.
  • Adding other ingredients: You can add other ingredients to your cucumber and onion salad to create different flavor combinations. Some popular additions include tomatoes, bell peppers, feta cheese, and dill. You can also add nuts, seeds, or croutons for a bit of extra crunch.
