On my endless quest to find ways to use up our abundance of zucchini, I came up with this one today. I add 5-6 cups of yellow crookneck squash. But you can also use yellow summer squash or zucchini. Stokely's was the brand of sloppy joe sauce that I used.

Yield 6 servings

Number Of Ingredients 13

1 8-ounce can tomato sauce
1/2 cup ketchup
1 1/2 tablespoons Worcestershire sauce
1 teaspoon prepared yellow mustard
1/2 teaspoon dry mustard
1 teaspoon molasses
1 garlic clove, finely minced
1/4 teaspoon orange zest
Pinch of ground cloves
Hot sauce to taste
1 pound ground beef

  • In a saucepan over low heat combine the sauce ingredients. Season to taste with salt and pepper. Mix well, and simmer while preparing the meat.

Add the ground sirloin, and saute, stirring occasionally, for 4 to 5 minutes, or until the meat is no longer pink. Heat for 3 minutes, stirring occasionally. Taste and season with salt, pepper or more hot sauce, if desired. Spoon 1/2 cup of the mixture over each bun. Serve immediately.
