6 carrots, peeled and roughly chopped
3 cloves of garlic, minced (minced)
3 pound rump roast
2 teaspoons Kosher salt
1 teaspoon black pepper
1/4 cup avocado or canola oil
3 tablespoons all-purpose flour (separate)
2 cups unsalted or low-sodium beef broth
1 cup dry, bold red wine (such as Malbec or Cabernet Sauvignon (or sub in 1 more cup of beef broth))
2-3 fresh rosemary sprigs (optional)

Steps:

Tips:

  • Choose the right cut of meat: Rump roast is a lean cut of beef that is perfect for slow cooking. It is important to choose a roast that is at least 3 pounds, as smaller roasts will dry out during cooking.
  • Brown the meat before cooking: Browning the meat before cooking helps to develop flavor and create a crispy crust. To brown the meat, heat a large skillet over medium-high heat and add the roast. Cook the roast for 3-4 minutes per side, or until browned.
  • Use a flavorful liquid: The liquid that you use to cook the roast will add flavor to the meat. Common liquids include beef broth, water, red wine, or beer. You can also add herbs, spices, and vegetables to the liquid to enhance the flavor.
  • Cook the roast on low heat: Slow cooking is the key to tender, flavorful meat. Cook the roast on low heat for at least 8 hours, or until the meat is fall-apart tender.
  • Let the roast rest before carving: After cooking, let the roast rest for 15-20 minutes before carving. This will help the juices to redistribute throughout the meat, resulting in more tender and flavorful slices.

Conclusion:

Slow-cooked rump roast is a delicious and easy-to-make meal that is perfect for a weeknight dinner or a special occasion. By following these tips, you can create a flavorful and tender roast that your family and friends will love.
