2 cartons (32 oz each) Progresso™ Chicken Broth Reduced Sodium
1 cup uncooked wild rice
1 bunch sliced green onions, whites and greens separated (1/2 cup whites, 1/2 cup greens)
1/2 cup diced celery
1/2 cup diced carrot
4 cups shredded sharp Cheddar cheese (16 oz)
1 cup heavy whipping cream

Steps:

  • Spray 5-quart slow cooker with cooking spray. In 10-inch skillet, cook bacon over medium heat until crispy. With slotted spoon, transfer bacon to paper towel-lined plate; cover and refrigerate.

Steps:

  • Spray slow cooker with nonstick cooking spray.

1 bag(s) (32 oz. bag) frozen tater tots
1 bag(s) (3 oz. bag) bacon pieces
1 lb boneless, skinless chicken breasts, diced
2 c shredded cheddar cheese
3/4 c milk
salt & pepper, to taste

Steps:

  • 1. Prepare your Crock Pot by giving it a good coating of non-stick cooking spray.
  • 2. Next, begin layering in your ingredients. Start with half of the tater tots, followed by 1/3 of the bacon and then 1/3 of the cheese. Now layer in all of your chicken; sprinkle with salt and pepper, to taste.
  • 3. On top of the chicken, layer on another 1/3 of the bacon pieces and a 1/3 of the cheese. Top with the remaining tater tots, then layer on the rest of your cheese and bacon. When done with your layers, pour the milk over the entire thing.
  • 4. Cover and cook on low about 4-6 hours. Be sure to check for doneness of your chicken, some Crock Pots take longer to cook than others.

8 (6 inch) flour tortillas, cut into 1-inch pieces
2 cups shredded Mexican cheese blend
6 cups hot cooked long-grain white rice

Steps:

  • Place the chicken into a 4-quart slow cooker. Sprinkle with the chili powder and cumin. Pour in the broth.
  • Cover and cook on LOW for 8 to 9 hours* or until the chicken is cooked through. Remove the chicken to a cutting board. Using 2 forks, shred the chicken.
  • Reserve 1 cup liquid in cooker, adding additional broth, if needed, to make 1 cup. Stir the soup into the cooker. Stir in chicken.
  • Heat the oven to 350 degrees F. Layer half the chicken mixture, tortillas and cheese in a 13x9x2-inch baking dish. Repeat the layers.
  • Bake for 30 minutes or until the mixture is hot and bubbling. Serve over the rice.
