AWESOME APPLE CRANBERRY CHUTNEY

Awesome Apple Cranberry Chutney image

This is an incredibly delicious recipe I got from one of the chefs at school. It goes well with smoked, roasted, or grilled pork as well as smoked turkey and even ham. It is good enough to eat with a spoon! If you don't like this stuff, seek medical attention as you may have a mysterious disorder!

Provided by Two Socks

Categories     Chutneys

Time 1h5m

Yield 3 1/2 cups

Number Of Ingredients 9

2 cups apple cider vinegar
2 cups light brown sugar
1 cup red wine
1 cinnamon stick
1 tablespoon mustard seeds
1 pinch dried chili pepper flakes
1/2 cup dried cranberries
1 tablespoon butter
3 granny smith apples, peeled, cored, and diced small

Steps:

  • Combine the first seven ingredients in a 2-quart saucepan and bring to a gentle boil over medium-high heat.
  • Reduce heat to medium-low and simmer, uncovered, until the mixture has reduced to a thick syrup, being careful NOT to caramelize the sugar.
  • Heat the butter in a large skillet over medium-high heat and saute the apples until they are a light golden color.
  • Add the apples to the chutney reduction, remove from heat, cover, and let stand 10 minutes before serving, removing the cinnamon stick.

Tips:

  • Use a variety of apples. Different types of apples will give your chutney different flavors and textures. For a classic chutney, use a mix of sweet and tart apples, such as Granny Smith, Honeycrisp, and Braeburn. For a more unique flavor, try using heirloom or specialty apples, such as Pink Lady or Fuji.
  • Don't overcook the cranberries. Cranberries should be cooked until they are softened but still hold their shape. If you overcook them, they will become mushy and lose their tartness.
  • Use a good quality vinegar. The type of vinegar you use will also affect the flavor of your chutney. For a classic chutney, use apple cider vinegar. For a more unique flavor, try using white wine vinegar or rice vinegar.
  • Add some spices. Spices can help to add depth and complexity to your chutney. Some popular spices to use in cranberry-apple chutney include cinnamon, nutmeg, ginger, and cloves.
  • Let the chutney mature. Chutney improves in flavor over time, so let it sit for at least a few weeks before eating it. This will allow the flavors to meld and develop.

Conclusion:

Cranberry-apple chutney is a delicious and versatile condiment that can be enjoyed in many different ways. It can be served as a side dish with roasted meats or poultry, or it can be used as a sandwich spread or a topping for grilled cheese sandwiches. It can also be used as an ingredient in other dishes, such as stews, curries, and salads. No matter how you choose to enjoy it, cranberry-apple chutney is sure to be a hit.
