1 pound waxy potatoes (peeled and cut into chunks)
4 medium carrots (peeled and cut into chunks)
3 sticks celery (sliced)
4 cups beef broth (see notes if want to use beer)
1 tablespoon Worcestershire sauce (can use soy sauce in place)
4 tablespoons white flour

SLOW-COOKER IRISH STOUT BEEF STEW

Slow-Cooker Irish Stout Beef Stew image

During the colder months, we can't get enough soup, stew and chili, but truth be told-sometimes we need a break from our old favorites. That's why this recipe is such a welcome addition. It makes for a hearty bowl with fall-apart-tender chunks of beef in a luscious, rich broth, but that's not all that's going on here. Caramelized onions add a sweetness that's well balanced by the slightly bitter (think coffee-flavored) taste of the Guinness®. The preparation of the beef-it's dredged in flour and browned before being added to the slow cooker crock-helps thicken the stew and adds all sorts of deeply savory flavor. So when you want something comforting and crowd-friendly-but also feel like you've been eating the same thing for months-turn to this sensational stew for something new.

IRISH STOUT BEEF STEW

Irish Stout Beef Stew image

This is a twist on an Irish stew recipe. I added some additional seasonings as the other recipes I've tried ended up being too bland. Serve with Irish soda bread.

Provided by jdave1084

Time 6h35m

Yield 8

Number Of Ingredients 14

4 large potatoes, cut into large chunks
1 medium white onion, chopped
2 cloves garlic, crushed
2 (14.5 ounce) cans green beans, drained
1 (6 ounce) can tomato paste
1 (1.5 ounce) package dry beef stew seasoning mix
2 teaspoons Worcestershire sauce
2 cups beef broth
2 tablespoons all-purpose flour, or as needed
½ teaspoon seasoned salt, or to taste
2 pounds cubed beef stew meat
2 tablespoons olive oil
½ (15 ounce) can Irish stout beer (such as Guinness®), or more if needed
1 cup water, or as needed

Steps:

  • Place potatoes, onion, garlic, green beans, and tomato paste in a slow cooker. Sprinkle with stew seasoning and pour beef broth over top. Mix in stew seasoning and Worcestershire sauce.
  • Heat oil in a medium skillet over medium-high heat.
  • Place flour on a plate and add seasoned salt. Coat stew meat in the flour mixture then brown in the hot skillet, 5 to 7 minutes per batch. Add browned meat directly to the slow cooker.
  • Add stout beer to the slow cooker and water, if necessary, to bring the liquid even with the ingredients so nothing dries out.
  • Cook on High until meat is tender and potatoes are soft, about 6 hours.

Tips:

  • Select the Right Cut of Beef: Chuck roast, brisket, or short ribs are excellent choices for stew as they contain plenty of connective tissue that breaks down during slow cooking, resulting in tender and flavorful meat.
  • Brown the Beef: Before adding the beef to the slow cooker, sear it in a skillet over medium-high heat. This step adds a delicious browned flavor to the meat and helps develop its full potential.
  • Use Good Quality Guinness: Guinness is a key ingredient in Irish beef stew, so make sure to use a good quality brand. It adds a rich, malty flavor to the stew.
  • Add Vegetables in Stages: Add root vegetables like carrots and potatoes early in the cooking process so they have time to soften. Add more delicate vegetables like peas and green beans towards the end of cooking to prevent them from overcooking.
  • Season Wisely: Use a combination of herbs and spices to add flavor to the stew. Some classic choices include thyme, rosemary, bay leaves, and black pepper.
  • Don't Overcrowd the Slow Cooker: Make sure there is enough space in the slow cooker for the liquid to circulate and the ingredients to cook evenly. Overcrowding can result in uneven cooking and a less flavorful stew.

Conclusion:

Slow Cooker Irish Beef Stew is a classic comfort food that is perfect for a cold winter's day. With its tender beef, flavorful Guinness broth, and an array of vegetables, this stew is a hearty and satisfying meal. By following these tips, you can create a delicious and authentic Irish beef stew that your family and friends will love. So, gather your ingredients, set your slow cooker, and let the magic begin!
