1/2 cup tomato sauce
2 large eggs, lightly beaten
1/4 cup ketchup
1 teaspoon Worcestershire sauce
1 small onion, chopped
1/3 cup crushed saltines (about 10 crackers)
3/4 teaspoon minced garlic
1/4 teaspoon seasoned salt
1/8 teaspoon seasoned pepper
1-1/2 pounds lean ground beef (90% lean)
1/2 pound reduced-fat bulk pork sausage
SAUCE:
1/2 cup ketchup
3 tablespoons brown sugar
3/4 teaspoon ground mustard
1/4 teaspoon ground nutmeg

Steps:

  • Cut three 25x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on the bottom and up the sides of a 4- or 5-qt. slow cooker. Coat strips with cooking spray., In a large bowl, combine the first nine ingredients. Crumble beef and sausage over mixture and mix well (mixture will be moist). Shape into a loaf. Place meat loaf in the center of the strips., In a small bowl, combine sauce ingredients. Spoon over meat loaf. Cover and cook on low 3-4 hours or until no pink remains and a thermometer reads 160°. Using foil strips as handles, remove the meat loaf to a platter.

1 large egg, beaten
1/3 cup taco sauce
1 cup coarsely crushed corn chips
1/3 cup shredded Mexican cheese blend or cheddar cheese
2 tablespoons taco seasoning
1/2 teaspoon salt, optional
2 pounds lean ground beef (90% lean)
Additional taco sauce or salsa

Steps:

  • In a large bowl, combine the first 6 ingredients. Crumble beef over mixture and mix lightly but thoroughly. Shape into a round loaf; place in a 3-qt. slow cooker. Cover and cook on low until a thermometer reads 160°, 6-8 hours. Serve with taco sauce or salsa.

2 slices whole wheat bread
3/4 lb ground round
3/4 lb ground turkey
1 1/2 cups sliced shiitake mushrooms
1/2 cup grated fresh onion
1 teaspoon dried Italian seasoning
3/4 teaspoon salt
2 large eggs, lightly beaten
1 garlic clove, minced
2 tablespoons ketchup
1 1/2 teaspoons Dijon mustard
1/8 teaspoon ground red pepper

Steps:

  • Place bread in a food processor, and pulse 10 times or until crumbs measure 1 1/3 cups. Combine the crumbs, beef, and next 7 ingredients (beef through garlic) in a large bowl, and shape meat mixture into a 9 x 6-inch loaf. Place loaf in an electric slow cooker.
  • Combine ketchup, mustard, and pepper in a small bowl, stirring with a fork. Spread ketchup mixture evenly over top of loaf. Cover with lid; cook on LOW for 5 hours.

1/4 teaspoon pepper
1 clove garlic, finely chopped, or 1/8 teaspoon garlic powder
1 egg
3 slices bread, torn into small pieces
1 small onion, chopped (1/4 cup)
1/2 cup ketchup

Steps:

  • Line 4 1/2- to 5-quart slow cooker with foil. Spray foil with cooking spray. In large bowl, mix all ingredients except ketchup. Shape mixture into loaf, and place in center of slow cooker. Spread ketchup over top. Cover; cook on Low heat setting 3 to 4 hours or until meat thermometer inserted in center of loaf reads 160°F. Remove meat loaf from slow cooker to serving platter. Cut into pieces to serve.
