1 cup panko breadcrumbs
2 large eggs
1 1/4 cups ketchup
2 tablespoons Worcestershire sauce
4 scallions, finely chopped
2 tablespoons chopped fresh parsley, plus more for topping
2 teaspoons chopped fresh thyme
Kosher salt and freshly ground pepper
12 ounces small fingerling potatoes, halved lengthwise
3 carrots, sliced 1 inch thick
1/4 cup low-sodium chicken broth
2 tablespoons packed light brown sugar

Steps:

  • Combine the meatloaf mix, panko, eggs, 3/4 cup ketchup, 1 tablespoon Worcestershire sauce, the scallions, parsley, thyme, 1 teaspoon salt and a few grinds of pepper in a large bowl; mix with your hands until just combined. Form into a 5-by-9-inch loaf.
  • Transfer the meatloaf to a 6-quart slow cooker. Scatter the potatoes and carrots over and around the meatloaf. Pour in the chicken broth. Cover the slow cooker and cook 8 hours on low or 4 hours on high.
  • When the meatloaf is done, skim off any excess fat from the juices in the slow cooker. Combine the remaining 1/2 cup ketchup, 1 tablespoon Worcestershire sauce and the brown sugar in a small bowl, then whisk in 1/4 cup juices from the slow cooker. Brush the top of the meatloaf with the ketchup mixture. Cover the slow cooker and let the meatloaf rest, 10 minutes.

¼ cup minced onion
2 large cloves garlic, minced

Steps:

  • Cut 2 long strips of aluminum foil, long enough to sit in your slow cooker and hang over the sides to use as handles for removing the cooked meatloaf. Place the strips so they form a cross in the bottom of the slow cooker, making sure the ends are long enough to gather on top of the loaf.
  • Heat olive oil in a skillet over medium heat. Add onion and garlic; cook until onion is tender, about 5 minutes. Season with pepper and salt; transfer to a bowl. 1 egg white

Steps:

  • Cover a wire rack small enough to fit in the slow cooker with foil; spray the foil with non-stick cooking spray.

2 slices fresh bread (ripped into small pieces, about 2 cups)
1/2 cup spaghetti sauce
1 large egg
2 tablespoons dried onion flakes

1/4 teaspoon ground black pepper

Steps:

3 tbs sun-dried tomatoes, minced
10 oz frozen chopped spinach, thawed and squeezed dry

Steps:

  • In a large bowl, combine the ground beef, eggs, bread crumbs, onion soup mix, garlic, Parmesan cheese and all be 2 tbs of the ketchup. In small bowl mix together the feta cheese and sun dried tomatoes. On a cutting board covered with wax paper, pat the meat mixture into a rectangle approximately 6 inches by 10 inches. Spead the feta cheese mixture over the meat rectangle to within 1 inch of the edges. Place the spinach over the feta. Using the wax paper, roll the meat loaf so that the meat completely covers the cheese and spinach center and seal tightly. Make sure that the ends of the meat loaf are also completely sealed.
