1 boneless beef chuck roast (3 to 4 pounds)
1 can (28 ounces) diced tomatoes, drained
3/4 cup chopped onion
3/4 cup Burgundy wine or beef broth
1-1/2 teaspoons salt
1 teaspoon dried basil
1/2 teaspoon dried oregano
1 garlic clove, minced
1/4 teaspoon pepper
1/4 cup cornstarch
1/2 cup cold water

1/3 cup olive oil
1 (2 1/2-3 lb) bottom round pot roast
2 large onions, quartered
2 celery ribs, thinly sliced (2 cups)
2 large carrots, peeled, thinly sliced (2 cups)
3 garlic cloves, minced
1 (6 ounce) can tomato paste
1 cup dry red wine
1 (1/2 ounce) package dried mushroom (such as portobello or cremini)
kosher salt (to taste, I use about 1/2 tablespoon)
1 teaspoon dried oregano
1 (28 ounce) can chopped plum tomatoes, liquid reserved

Steps:

  • Heat the oil in a large pan over medium-high heat and brown the roast on all sides. Transfer the roast to a 4- to 6-quart slow cooker.

1 boneless chuck-eye roast, tied (5-6 lbs.)
2 medium onions, chopped

6 garlic cloves
1 1/2 cups dry red wine
2 tablespoons tomato paste
1/2 ounce dried porcini mushrooms
1/2 teaspoon red pepper flakes
2 teaspoons dried oregano leaves
2 bay leaves

1 3/4 cups low sodium beef broth
