1 small onion, chopped
1 small green bell pepper, chopped
2 cloves garlic, chopped
1 tablespoon fresh cilantro leaves
1 teaspoon annatto or achiote powder
1 tablespoon olive oil
½ cup diced ham
1 (16.5 ounce) can red beans, drained
1 cup peeled and diced potatoes
½ cup peeled and diced pumpkin
1 cup water
1 teaspoon salt

Steps:

  • In a blender or food processor, puree onion, bell pepper, garlic, cilantro, and annatto powder. Set mixture aside.
  • Heat a large, heavy saucepan over medium heat. Pour in olive oil and saute ham with pureed mixture for 10 minutes, until browned. Mix in beans, potatoes, pumpkin, water, and salt. Reduce heat to low and simmer, stirring occasionally, for approximately 25 minutes, until mixture thickens and potatoes and pumpkin are tender.

1 pound Small Red Beans
1 cup Rice
1 White Onion (diced)
1 Andouille Sausage (chopped)
½ cup cooked Bacon
½ teaspoon Salt
8-9 cups Water

Steps:

  • Rinse the beans and soak them if you want.
  • Take a Dutch oven and add water, salt and beans in it.
  • Keep the flame on high and bring this mixture to a boil.
  • Now, add garlic, onion, andouille sausage, and bacon in this mixture and keep the flame on low.
  • Stir this mixture occasionally on low flame. Cook it for about 1 ½ hour. Check the water level and add more if you want.
  • Wash your rice thoroughly and rinse it. Then, take a rice cooker or pot. Fill it half with water and add the rice in it.
  • Bring the water to a boil. Cook it until the water has dried up and the rice is soft and doubled its size.

1 cup uncooked rice
1 (16 ounce) package turkey kielbasa, cut diagonally into 1/4 inch slices
1 onion, chopped
1 green bell pepper, chopped
1 clove chopped garlic
2 (15 ounce) cans canned kidney beans, drained
1 (16 ounce) can whole peeled tomatoes, chopped
½ teaspoon dried oregano
salt to taste
½ teaspoon pepper

Steps:

  • In a saucepan, bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
  • In a large skillet over low heat, cook sausage for 5 minutes. Stir in onion, green pepper and garlic; saute until tender. Pour in beans and tomatoes with juice. Season with oregano, salt and pepper. Simmer uncovered for 20 minutes. Serve over rice.

This is a recipe that I adapted. This recipe was printed in the cookbook that came with my crock pot over 25 years ago. The serving size is approximate. The number of servings depends on if you are serving this as a side or a main dish.

1 lb dried red beans or 1 lb pinto beans
2 cups water
2 cups hot water
1 large onion, coarsely chopped
1 (14 1/2 ounce) can diced tomatoes
2 garlic cloves, minced
1 teaspoon crushed red pepper flakes
2 teaspoons salt
1/4 lb bacon, chopped (optional)

Steps:

  • Sort beans and wash under running water.
  • Place beans in a large pan and bring to a boil.
  • Boil 10 minutes, drain.
  • Place the precooked beans in a crock pot adding water and remaining ingredients.
