2 tablespoons salt, or to taste
1 teaspoon garlic powder
1 teaspoon red pepper flakes
1 teaspoon ground black pepper
1 dash cayenne pepper
4 medium (blank)s chicken leg quarters
wood chips, soaked in water for 20 minutes

Steps:

  • Combine salt, garlic powder, red pepper flakes, black pepper, and cayenne in a bowl. Marinate chicken leg quarters in the homemade seasoning rub for 4 to 8 hours.
  • At the same time, set an electric smoker to 275 degrees F (135 degrees C) for 3 hours. Keep the top vent closed.

1 tablespoon simply asia spicy szechwan five mixed spice
1 -180 cu. inch bag of pecan and cherry soking chips
2 - bag of kinsford charcoal

  • Rinse and pat dry chicken.
  • Sprinkle chicken with spicy Simply Asia Szechwan five spice, make sure you get under skin.
  • let sit to room temperature.
  • prepare smoker for 225 degree temperature, make sure its 225 for 20 minutes.
