2 lbs meaty ham hocks
2 lbs dried lima beans
6 cups water
2 onions, chopped
1/3 cup celery, diced
1 tablespoon brown sugar
1 teaspoon dry mustard
1 teaspoon salt

Steps:

  • Put the lima beans in a kettle with the water. Bring to a full boil and boil for 2 minutes. Remove from heat and allow them to stand, covered, for 1 1/2 hours. Then add the ham hocks, onions, and celery. Season with brown sugar, mustard, and salt. Cover and simmer for 2 hours. Remove meat from bones, keeping it in large pieces. 1 teaspoon salt
1/2 cup molasses
1/2 cup light brown sugar, firmly packed
2 tablespoons prepared mustard
1 (8 ounce) can tomato sauce
3 lbs smoked pork hocks (3)
1 cup onion, peeled and chopped

Steps:

  • Rinse beans; put into a large pot with 2 quarts cold water.
  • Heat to the boil; simmer two minutes.
  • Remove from heat; cover and let stand for one hour.
  • Add salt.
  • Reheat to boil, reduce heat and simmer, covered, until beans are tender (about an hour).
  • Drain and reserve liquid.
  • Combine molasses, sugar, mustard and tomato sauce.
