SOFT SANDWICH BUNS (DOUGH HOOK MIXER VERSION)
My entire family absolutely loves these buns with sloppy joes. They hold their shape and don't fall apart when combined with the 'juiciness' of the sloppy joes. I'm not going to buy sandwich buns again. They couldn't compare to these.

SOFT ONION SANDWICH ROLLS
This is it! I've been through many recipes to come up with this one. Great for BBQ beef sandwiches. If you prefer plain rolls, omit onion ingredients.

Steps:
- Place the milk, water, butter, salt, sugar, onion powder, 3 tablespoons of dried onion, potato flakes, flour and yeast into the pan of a bread machine in the order recommended by the manufacturer. Select the Dough cycle, and press Start.
- When the cycle has completed, remove the dough from the machine, and knead on a lightly floured surface. Cut into 8 equal pieces, and form into balls. Gently flatten the balls until they are 4 inches in diameter. If they keep shrinking back, just let them relax for a minute before flattening. Place on a baking sheet, and cover loosely with a towel. Set in a draft-free place to rise until doubled in size, about 40 minutes.
- Preheat the oven to 350 degrees F (175 degrees C). Whisk together the egg white and water in a cup. Brush over the tops of the risen rolls, and sprinkle with remaining minced onion.
- Bake for 15 to 20 minutes in the preheated oven, until golden brown. Cool completely, then slice in half horizontally before using.

Tips:
- Activate the yeast properly: Ensure the water is warm enough (around 110°F) and let the yeast proof until it becomes foamy. This ensures the yeast is active and will help the buns rise properly.
- Use high-quality ingredients: Fresh, high-quality ingredients will result in better-tasting buns. Use bread flour for a chewier texture, all-purpose flour for a softer bun, or a combination of both for a balance of both textures.
- Knead the dough properly: Kneading the dough develops the gluten, which gives the buns their structure and chewiness. Knead the dough for at least 5-7 minutes, or until it becomes smooth and elastic.
- Let the dough rise properly: The first rise allows the yeast to produce carbon dioxide, which helps the dough rise. The second rise gives the buns their final shape and volume. Make sure to let the dough rise in a warm place, free from drafts.
- Bake the buns at the right temperature: The buns should be baked at a high temperature initially to create a crust, then the temperature should be lowered to allow the buns to finish baking through. This will result in buns that are golden brown and have a soft, fluffy interior.
Conclusion:
Making soft and fluffy sandwich buns at home is a rewarding experience, and with the right ingredients and techniques, you can create delicious buns that are perfect for sandwiches, burgers, and more. Remember to activate the yeast properly, use high-quality ingredients, knead the dough properly, let the dough rise properly, and bake the buns at the right temperature. With a little practice, you'll be able to make perfect sandwich buns every time.
