BEEF STROGANOV (SAUTEED BEEF IN SOUR-CREAM SAUCE)

Beef Stroganov (Sauteed Beef in Sour-Cream Sauce) image

Originally created in the late 19th Century for a Russian count. There are a lot of European and American versions that come nowhere close to reproducing this dish as it was originally made. What follows is the classic Russian version.

Time 1h

Yield 6 serving(s)

Number Of Ingredients 9

1 tablespoon mustard powder
1 tablespoon sugar
2 teaspoons salt
4 -5 tablespoons vegetable oil
4 cups onions, thinly sliced and separated into rings
1 lb fresh mushrooms, thinly sliced lengthwise
2 lbs filet of beef, trimmed of all fat
1 teaspoon fresh ground black pepper
1 pint sour cream

Steps:

  • In a small bowl combine the mustard, 1 1/2 tsp of the sugar, a pinch of the salt and enough hot water (about a tablespoon) to form a thick paste.
  • Let the mustard rest at room temperature for about 15 minutes.
  • Heat 2 tbsp of the oil in a heavy 10" to 12" skillet over high heat until a light haze forms above it.
  • Drop in the mushrooms and onions, cover the pan, and reduce to low heat.
  • Stirring from time to time, simmer 20-30 minutes, or until vegetables are soft.
  • Drain them in a sieve, discard the liquid and return the mixture to the skillet.
  • With a large, sharp knife cut the fillet across the grain into 1/4" wide rounds.

  • Heat 2 tbsp of oil in another heavy 10" to 12" skillet over high heat until very hot, but not smoking.
  • Drop in half of the meat and, tossing the meat constantly with a large spoon, fry for 2 minutes or so until the meat is lightly browned.
  • With a slotted spoon transfer the meat to the vegetables in the other skillet, and fry the remaining meat the same way, adding more oil if needed.
  • When all the meat has been combined with the vegetables, stir in the remaining salt, pepper and mustard paste.

This recipe is popular on both sides of the border. It came from a friend in Alaska, then traveled with me to old Mexico, where I lived for 5 years, and is now a potluck favorite in my Arkansas community. It's easy to keep the beans warm and serve from a slow cooker. -Barbara Short, Mena, Arkansas

CREAMY AND CHEESY BEEF AND BEAN CASSEROLE

Creamy and Cheesy Beef and Bean Casserole image

Taco seasoned ground beef, cheese, refried beans, all in a super-simple casserole. DH likes with chips, I also like it in tortillas. We like to use spicy salsa and taco seasoning, but use your preference.

Provided by KlynnPadilla

Categories     Spicy

Time 45m

Yield 6-8 serving(s)

Number Of Ingredients 9

2 lbs ground beef
3 garlic cloves, minced
1 (1 1/4 ounce) envelope taco seasoning (or homemade)
1 (32 ounce) can refried beans (again, homemade is great if you have the time)
1 (10 ounce) can cream of mushroom soup
1/3 cup salsa, of your choice plus 1/2-3/4 cup additional
2 cups shredded cheese (I use cheddar and a colby jack blend, then throw some crumbled queso fresco on top for good measure)
sliced jalapeno (optional)
sliced black olives (optional)

Steps:

  • Preheat oven to 350. Spray a 9x13 baking dish with vegetable oil spray; spread the refried beans in the bottom and set aside.
  • Brown the ground beef and garlic, drain, season with taco seasoning and stir in the cream of mushroom soup and the 1/3 cup salsa.
  • Layer on top of the beans: salsa, half of the cheese, the meat mixture, jalapeños and olives, if using, remaining cheese.
  • Bake for 30 minutes, and enjoy!

Tips:

  • Use a wide, heavy-bottomed pot or Dutch oven to ensure even cooking and prevent the beef from sticking.
  • Brown the beef in batches if necessary to avoid overcrowding the pot and ensure even browning.
  • Don't skip the step of deglazing the pot with red wine; this adds a rich, complex flavor to the sauce.
  • Use a good quality beef broth for the best flavor; homemade is ideal, but a store-bought brand will work in a pinch.
  • Add the sour cream and beans during the last 15 minutes of cooking to prevent the sour cream from curdling.
  • Serve the dish over rice, mashed potatoes, or noodles for a complete and satisfying meal.

Conclusion:

This sour cream beef and beans recipe is an easy and flavorful dish that is perfect for a weeknight meal. The beef is tender and juicy, the sauce is creamy and tangy, and the beans add a hearty and filling element. With a few simple ingredients and a little bit of time, you can have a delicious and satisfying meal on the table that the whole family will enjoy.
