SOUR CREAM AND SAUERKRAUT PORK CHOPS

THYME & GARLIC PORK CHOPS WITH EGG NOODLES IN SOUR CREAM SAUCE
Steps:
- Place a large pot of salted water onto boil. Heat the vegetable oil in a large straight sided skillet over medium high heat. Rub the pork chops on both sides with the cut side of the halved garlic. Then season both sides with salt and pepper and sprinkle with 1 tsp thyme. You can use more if you like the flavor. Place the pork chops in the skillet and allow them to brown. About 5 minutes on each side - more or less depending on your cook top. When they're golden brown and firm to the touch you know you're done. Remove the pork chops and place them on a plate to rest. Add the onions to the skillet and let saute for a few minutes then add the garlic and remaining thyme and cook until the onions are translucent. Dissolve the bullion cube in the boiling water. Combine the flour and the sour cream. Add the egg noodles to the boiling water. Add the beef bullion water to the skillet. Make sure you scrape up all the yummy bits! Add the sour cream to the skillet and combine well. Season the sauce with salt & pepper to taste. Drain the noodles and toss them with the sauce. Serve!

PORK CHOPS IN SOUR CREAM SAUCE

Steps:
- Place oil in a large saute pan (cast iron skillet is best). Season pork chops generously with salt and pepper and place in the pan, Cook on medium high heat until browned on both sides and cooked through (135 degrees internal temperature). Remove chops from the pan to a plate and cover with tin foil to rest and finish cooking (internal temperature should rise to 145 degrees).
- Add a little more olive oil to pan and toss in onions then cook until softened (can also add mushrooms if desired along with a few dashes of worcestershire sauce).
- Place pork chops into a 9x12 glass dish, cover with onions and then cover glass dish with tin foil to retain heat.
- Begin making sauce by whisking flour and sour cream together in a medium bowl.
- Add beef broth and pepper to saute pan on medium heat and scrape browned bits into the broth.
- Add sour cream to broth and whisk to mix. Then add dashes of worcestershire sauce and continue to whisk until well mixed and sauce thickens to desired consistency. Milk can be added to sauce if it becomes too thick.
- Pour sauce over chops and onions. Serve directly or re-heat dish in oven at 350 degrees for 10-15 minutes before serving.
- ALTERNATE COOKING METHOD FROM ORIGINAL RECIPE:
- Place oil in a large saute pan. Place the pork chops in the pan and cook under low to medium heat until browned on both sides. Remove the pork chops from the pan to a plate.
- Add onions to the pan, cook until softened. Stir in the beef broth and pepper, return the pork chops to the pan, adding any juices left on the plate. Spoon onions over pork chops, cover and simmer about 12 minutes or until no longer pink in the middle. Remove pork chops and onions from the saute pan to a plate.
- In a medium bowl stir the sour cream and flour together. Add to the broth in the pan, whisk until well incorporate. Add the worcestershire sauce to the gravy, stirring to incorporate. If the gravy is too thick, thin it with milk to the consistency you prefer. Place the pork chops and onions back into the pan and cook until pork chops are heated back up. Serve immediately.

SOUR CREAM GRAVY BAKE FOR CHOPS OR CHICKEN
I have been making this so long I don't remember if I made the recipe up or stole it. Probably the latter. It is kid and picky eater friendly. Great gravy served over mashed potatoes or my favorite- white rice! I am posting the recipe for chicken...see note at the bottom to make it with pork chops.

Steps:
- Cut up fryer or if using precut pieces proceed to step 2.
- Roll pieces in egg and then in flour(sometimes I double batter them- roll in eggs again and dredge in flour again).
- Fry in hot oil until browned. It is only necessary to brown it -- no need to cook completely.
- Meanwhile combine and warm in a sauce pan the soup, milk, sour cream, and desired seasonings.
- Place browned chicken into a casserole dish or deep cast iron skillet with a lid. Chicken pieces need not be in a single layer- they may overlap or even stack on top of one another.
- Pour soup mixture over all and cover.
- Bake at 350 for 45 minutes to an hour.
- *NOTE: to make these with pork chops -- use cream of mushroom soup instead and add sauteed onions and mushrooms. I prefer a fattier pork chop instead of a Butterfly Chop for this.
