Almost-Famous Chimichangas image

It has happened to all of us: A restaurant closes and just like that, a favorite dish is gone forever. For thousands of fans of the Tex-Mex chain Chi-Chi's, which shuttered its last 65 restaurants in 2004, that dish was the chimichanga: a big tortilla stuffed with beef, seafood or chicken, lettuce, jack cheese and salsa, and topped with a secret "zesty Mexi-sauce." We've seen endless message- board posts from fans pondering the recipe and reminiscing about that unforgettable topping. Now they can taste it again: Chefs in Food Network Kitchens re-created the old favorite from memory.

CHICKEN - SOUTH OF THE BORDER

Chicken - South Of The Border image

I found this recipe in an issue of Good Housekeeping back in the early 80's,when Southwestern/Mexican recipes were hard to come by - at least here in Wisconsin . It's like a Southwestern version of Chicken Parmesan. I used to use Pace Picante on it, but you can adjust it with any salsa or heat level you prefer. I also added the green chiles because I love them! Also would accompany this chicken with home-made Mexican rice, and a picante-based vegetable "stew."

1/8 teaspoon cayenne pepper
2 eggs
3/4 cup yellow cornmeal

Tips:

  • Prep your ingredients in advance: This will help you save time and ensure that everything is ready when you need it.

  • Cook the chimichangas in batches: Don't try to cook all of the chimichangas at once, or they will not cook evenly.
  • Be careful not to overcook the chimichangas: They should be cooked until they are golden brown and crispy, but not hard.
  • Serve the chimichangas with your favorite toppings: Some popular options include sour cream, guacamole, salsa, and cheese.
