An easy and family pleasing casserole that's on the table in less than 45 minutes. I serve this with a guacamole salad, or a green salad with slices of avocado.

SOUTH OF THE BORDER CHICKEN CASSEROLE
I found this recipe about 4 years ago on a website (submitted by Teresa Johnson). The website doesn't look like it is still around, but this recipe is so good, I had to share it. Not for the calorie conscious, but nice for a treat now and then!!!

Steps:
- Blend together sour cream, cream cheese, cottage cheese.
- Add soup, salt, garlic powder, chilies, chicken, rice, cheeses, tomatoes and black olives (if using).
- Spray a 9x13-inch pan with non-stick spray and pour combined ingredients into pan. Bake at 350° for 30 minutes.
Tips:
- Prep your ingredients beforehand: Dicing, slicing, and measuring your ingredients before you start cooking will save you time and make the cooking process smoother.
- Use a large skillet: A large skillet will allow you to easily brown the ground beef and cook the vegetables without overcrowding the pan.
- Don't overcrowd the skillet: If you overcrowd the skillet, the food will not cook evenly and will end up soggy.
- Season the beef generously: Season the ground beef with salt, pepper, and your favorite taco seasoning to taste. This will give the beef a delicious flavor that will permeate the entire casserole.
- Use a variety of vegetables: Feel free to use your favorite vegetables in this casserole. Some good options include corn, black beans, bell peppers, and onions.
- Don't overcook the vegetables: Cook the vegetables until they are tender but still have a bit of a crunch. Overcooked vegetables will become mushy and lose their flavor.
- Use a creamy soup: A creamy soup, such as cream of mushroom or cream of celery, will help to bind the casserole together and give it a creamy, rich flavor.
- Don't be afraid to experiment: This casserole is very versatile, so feel free to experiment with different ingredients and flavors. For example, you could add a can of diced tomatoes, a teaspoon of chili powder, or a handful of chopped cilantro.
Conclusion:
This South of the Border casserole is a delicious and easy-to-make dish that is perfect for a busy weeknight meal. It is also a great way to use up leftover taco meat. With its flavorful ground beef, tender vegetables, and creamy sauce, this casserole is sure to be a hit with your family and friends. So next time you are looking for a quick and easy meal, give this South of the Border casserole a try!
