SOUTHERN MUSHROOM-BEEF BURGERS

Southern Mushroom-Beef Burgers image

This recipe is sponsored by Mushroom Council. Mushrooms have a natural umami flavor and a meaty texture, so they blend well with ground beef. I love the combination!

Time 45m

Yield 6 burgers

Number Of Ingredients 22

8 ounces extra-sharp yellow cheddar cheese, shredded
4 ounces white cheddar cheese (preferably Vermont cheddar), shredded
8 ounces cream cheese, softened
4 ounces diced pimientos, drained and liquid reserved
3 tablespoons mayonnaise
1 tablespoon finely chopped fresh chives
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1/2 teaspoon smoked paprika
Kosher salt and freshly ground black pepper
2 1/4 pounds 80/20 Angus beef
12 ounces baby bella (cremini) mushrooms, finely chopped
2 tablespoons Worcestershire sauce
1 tablespoon onion powder
1 tablespoon smoked paprika
1 tablespoon garlic powder
Kosher salt and freshly ground black pepper
6 potato buns, split
Melted butter, for brushing
1/3 cup mayonnaise
1/3 cup barbecue sauce (smoky sauces work best)
Lettuce, sliced beefsteak tomatoes, sliced red onions and bread-and-butter pickles, for serving

Steps:

  • Make the pimiento cheese: In a bowl, mix both cheddars, the cream cheese, pimientos, mayonnaise, chives, garlic powder, cayenne and paprika. Season with salt and black pepper. Add the reserved pimiento liquid to loosen slightly. Cover and refrigerate until ready to serve.
  • Make the patties: In a bowl, combine the beef, mushrooms, Worcestershire sauce, onion powder, paprika, garlic powder, 1 1/2 teaspoons salt and 1 tablespoon black pepper. Form into 6 extra-large patties, about 8 ounces each. Make a little indentation in the center of each patty.
  • Preheat a grill pan to medium-high heat. Grill the patties for 4 minutes on each side, or until the internal temperature reaches 150˚ F to 155˚ F (I like my burger medium well), topping each patty with a large dollop of the pimiento cheese during the last 1 to 2 minutes of cooking. If you like your patties more on the rare side, take them off the grill when the internal temperature reaches 140˚ F. Remove the patties and cover with foil for about 5 minutes. While the burgers rest, slather the buns with melted butter and place them on the grill for about a minute (keep an eye on them to avoid burning).
  • Make the sauce: Mix the mayonnaise and barbecue sauce in a small bowl. To assemble the burgers, spread the barbecue mayonnaise on the bottom buns. Top with the lettuce and tomatoes. Add the burgers, red onions and pickles. Place the bun tops on the burgers.

SOUTHERN PIMENTO CHEESE BURGERS

Time 50m

Yield 4 servings

Number Of Ingredients 18

1 cup shredded extra-sharp Cheddar, room temperature
1/3 cup shredded Monterey jack, room temperature
3 tablespoons mayonnaise, room temperature
2 tablespoons cream cheese, room temperature
2 ounces jarred diced pimento peppers, drained
1 tablespoon bread and butter pickle juice
1/2 tablespoon horseradish sauce
1 teaspoon yellow mustard
2 tablespoons mayonnaise
1 tablespoon honey
1 1/4 cups shredded cabbage
8 slices thick-cut applewood smoked bacon
1 1/4 pounds ground chuck
1/4 pound cured and smoked country ham, finely chopped (or chopped in a food processor)
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
4 potato hamburger buns, split
1/2 cup crushed kettle-cooked plain potato chips

Steps:

  • Preheat oven to 375 degrees F.
  • To prepare Pimento Cheese, in a medium mixing bowl, combine Cheddar and Jack cheeses, mayonnaise, cream cheese, pimento peppers, pickle juice, horseradish sauce, and mustard; mix until well combined.
  • To prepare Honey Slaw, in a small mixing bowl combine mayonnaise, honey, and cabbage; mix until well combined.
  • Heat a 12-inch nonstick grill pan over medium-high heat. Add bacon and cook until the bacon is crispy, about 5 minutes, flipping once. Drain on paper towels. Pour off almost all of the bacon fat from the pan, leaving a very thin layer.
  • To make the patties, combine the beef, country ham, salt, and pepper in a large bowl. Handling the meat as little as possible to avoid compacting it, mix well. Divide the mixture into 4 equal portions and form into patties to fit the buns.
  • Using the same grill pan as before, cook the hamburgers over medium-high heat for 3 minutes per side or until cooked medium rare.
  • Meanwhile, place buns on a rack in the oven. Bake for 3 to 5 minutes. Also, place the plates that the burgers will be served on in the oven to heat.
  • To assemble the burgers, spread a generous amount of Pimento Cheese on the cut sides of the buns. On each bun bottom (on top of the Pimento Cheese), place a thin layer of Honey Slaw. Top the slaw with a burger patty, 2 slices of bacon, and crushed potato chips. Add the bun tops. Place the completed hamburgers on a nonstick baking sheet and bake in the oven for 1 minute. Serve burgers on warm plates.

Tips:

  • Choose high-quality ground beef. Look for a blend of 80% lean and 20% fat for a juicy and flavorful burger.
  • Season the beef simply. Salt, pepper, and garlic powder are all you need for a classic burger. Don't over-season, or you'll mask the flavor of the beef.
  • Form the patties gently. Overworking the beef will make the burgers tough. Just mix the ingredients until they're combined, then form the patties into loose balls. Don't press them down too hard.
  • Cook the burgers over medium heat. This will help prevent them from drying out. If you're cooking the burgers on a grill, cook them over indirect heat for the first few minutes to prevent flare-ups.
  • Use a meat thermometer to ensure the burgers are cooked to your desired doneness. For a medium-rare burger, cook to an internal temperature of 135°F. For a medium burger, cook to 145°F. For a well-done burger, cook to 160°F.
  • Let the burgers rest for a few minutes before serving. This will help the juices redistribute throughout the burgers, making them more juicy and flavorful.

Conclusion:

Southern burgers are a delicious and versatile dish that can be enjoyed by people of all ages. With so many different variations to choose from, there's sure to be a Southern burger that everyone will love.
