6 slices bacon, chopped
3 tablespoons butter
1 red onion, chopped
2 pounds fresh green beans, trimmed and snapped
8 small new potatoes, diced
1 large clove garlic, minced
¼ cup chicken broth
1 ½ teaspoons white balsamic vinegar
salt and pepper to taste

Steps:

  • Place the chopped bacon in a skillet, and cook over medium heat, stirring occasionally, until evenly browned, 8 to 10 minutes. Drain the bacon pieces on a paper towel-lined plate.
  • Melt the butter in a skillet with a lid over medium-low heat, and cook and stir the onion until translucent, about 5 minutes. Stir in the cooked bacon, green beans, potatoes, garlic, and chicken broth. Bring to a boil, cover, and simmer over low heat until the green beans are tender, about 10 minutes. Sprinkle with vinegar, salt, and pepper, and serve.

2 lbs. green beans (use frozen or fresh)
6-7 slices bacon, chopped into one inch pieces
6 cups chicken stock (you may not need all of this--just cover the beans in the pot)
2 tbsp. garlic powder
1/2 tbsp. salt
1 tsp black pepper
4 tbsp. unsalted butter

Steps:

  • If using fresh green beans, snap off the ends then snap the beans into 2-inch pieces. Wash thoroughly.
  • Cook bacon until crispy, then remove from pot.
  • Add green beans to bacon grease and stir to coat well.
  • Add bacon back to pot. Add broth, garlic powder, salt, and pepper.
  • Bring to a boil then turn down to a simmer and cook until tender, 30-45 minutes. Taste periodically and add seasonings as necessary.
  • Add butter to pot when beans are almost done. Season with additional salt and pepper as needed.

1 1/4 pounds green beans, trimmed and chopped into 1-inch pieces
2 slices bacon, chopped
1 small onion, minced
2 tablespoons red wine vinegar
2 teaspoons sugar

Steps:

  • Cook green beans in 1-inch simmering water, covered, for 6 minutes. Drain and set aside. Return skillet to stove and set burner to medium high. Add bacon and brown. 1 cup chicken broth

Steps:

  • Cook bacon in cast iron pan or skillet until crispy to the amount preferred.
  • DO NOT drain grease from pan.
  • Remove bacon from pan and set on paper towels to cool.

8 small new potatoes, halved if large
Salt and freshly ground black pepper

1 medium onion, finely chopped

1.5 cups torn sourdough bread (from 1 [1-lb.] loaf)
1 medium-size yellow onion, thinly sliced (about 2 cups)
1 tablespoon canola oil
1 cup heavy cream
1 teaspoon kosher salt
.125 teaspoon black pepper

Steps:

  • Bring a large pot of salted water to a boil over high. Add green beans; cook until tender-crisp, 3 to 5 minutes. Drain; rinse with cold water. Drain; set aside.
  • Cook bacon in a 10-inch skillet over medium-high, stirring occasionally, until crisp, about 10 minutes. Remove from heat. Transfer bacon to a plate lined with paper towels, reserving drippings in skillet. Pulse bread pieces in a food processor until breadcrumbs form, about 20 pulses. (You'll have about 1 cup.)
