2 pounds fresh pole beans, strings removed, ends trimmed, snapped 2 inches long
6 pieces bacon
1 tablespoon vegetable oil
1 cup strong chicken broth
3 tablespoons butter

Steps:

  • Wash beans well, then drain. Fry bacon in cast-iron skillet or Dutch oven; reserve drippings, and set bacon aside. Sauté pole beans in hot bacon drippings and oil until bright green, about 5 minutes, turning occasionally. Add chicken broth, butter, and crumbled bacon. Add just enough water to almost cover the beans. Season with salt and pepper to taste. Bring to a boil, then lower heat to a simmer. Simmer several hours, until beans are very tender and slightly shriveled. Turn every 30 minutes or so, allowing beans on top to go to bottom. More water may have to be added during cooking to keep water level almost covering beans.

KENTUCKY POLE BEANS AND POTATOES

Kentucky Pole Beans and Potatoes image

From the cookbook, "The Glory of Southern Cooking" by James Villas. This is pretty much exactly how my grandma made beans straight from the garden.

Provided by happy2bme_9_8206787

Categories     Vegetable

Time 2h

Yield 6 serving(s)

Number Of Ingredients 5

2 lbs fresh green beans (do not use haricot vert)
1 ham hock (see note below)
1/2 teaspoon salt
fresh ground black pepper
12 small red potatoes

Steps:

  • Note: The recipe called for a 1-inch chunk of streak-o-lean (lean salt pork), but the website doesn't recognize. You can use streak-o-lean if you can find it, ham hock, pork belly, or bacon.
  • Pinch off the ends of the beans, and if necessary, remove any strings. Snap the beans into 1-1/2 inch pieces, rinse well in a colander and transfer to a large pot.
  • Add the cooking meat, salt and pepper and enough water to cover by 1 inch. Bring to a boil, reduce heat to low, cover, and simmer the beans slowly until tender but still slightly firm, about 1 hour.
  • Meanwhile, rinse the potatoes to remove any grit, cut away a strip of peel around the center of each with a vegetable peeler.
  • Add the potatoes to the beans, stir and continue to simmer until tender, about 30 minutes, adding more water if needed.
  • Drain and serve hot in a large bowl.

Tips:

  • Soak the beans: Soaking the beans overnight or for at least 4 hours helps to reduce cooking time and makes them more digestible.
  • Use a flavorful cooking liquid: The cooking liquid is absorbed by the beans, so using a flavorful broth or stock will enhance their taste.
  • Season the beans well: Don't be afraid to add salt, pepper, and other spices to the beans while they're cooking. This will help to develop their flavor.
  • Cook the beans until they're tender: The beans should be cooked until they're tender but still hold their shape. Overcooking them will make them mushy.
  • Add vegetables and meat towards the end of cooking: This will help to prevent them from becoming overcooked.
  • Serve the beans hot: Pole beans are best served hot, so reheat them if necessary.

Conclusion:

Southern home-cooked pole beans are a delicious and versatile dish that can be enjoyed as a main course or a side dish. With their creamy texture and slightly sweet flavor, they're a perfect addition to any meal. So next time you're looking for a comforting and flavorful dish, give these pole beans a try.
