Yield 8

Number Of Ingredients 11

2 cups buttermilk
1 tablespoon Dijon mustard
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon cayenne pepper
1 whole chicken, cut into pieces
2 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon garlic powder
1 tablespoon onion powder
5 cups vegetable oil for frying

Steps:

  • When you are ready to cook the chicken, combine the flour, baking powder, garlic powder, and onion powder in the other plastic bag. Shake to mix thoroughly. Transfer one marinated chicken piece at a time into the dry ingredient bag, and shake well to ensure complete coverage. SOUTHERN FRIED CHICKEN

Provided by Robert Irvine : Food Network

Categories     main-dish

Time 8h45m

Yield 6 to 8 portions

Number Of Ingredients 8

1 dozen eggs, whipped
1 cup buttermilk
2 tablespoons Cajun spice
16 pieces fresh bone-in chicken (2 to 3 pounds)
8 cups vegetable oil
4 cups all-purpose flour
1 tablespoon kosher salt
1 teaspoon ground black pepper

Steps:

  • In a large bowl, blend the eggs, buttermilk and Cajun spice. Mix well, and then pour over the chicken pieces, mixing and coating well. After coating the chicken, cover and refrigerate overnight, or for a minimum of 4 hours.
  • Preheat the oil to 300 degrees F in a deep-fryer. Remove the chicken from the marinade and allow to sit on a baking screen for 5 minutes. This will allow any excess marinade to drip off.
  • Next, in a large bowl, blend the flour, salt and pepper, mixing well. Dredge the marinated chicken in the flour. Coat the chicken well with flour, and then tap off any excess. Add to the heated oil. Fry the chicken in batches until it reaches 165 degrees F on an instant-read thermometer, 13 to 15 minutes. Then remove from the oil and allow any excess to drip off before serving. This will allow the meat to rest before serving. Repeat the cooking process with the remaining chicken. (Hold the cooked chicken in the oven on low temperature if doing in batches.)

SOUTHERN LIVING'S BEST FRIED CHICKEN

Southern Living's Best Fried Chicken image

Many modern cooks have never learned to fry. We are convinced that fried food is unhealthy, unpopular and messy. But Norman King, a lifelong Southerner, a registered dietitian and a food editor at Southern Living magazine set out to change that. In "The Way to Fry," he offers both a guide to proper deep-frying technique, and a terrific recipe for crunchy, juicy fried chicken. While at first glance the recipe may resemble every other fried chicken you've ever seen, the differences lie in the precise instructions, ensuring chicken that's cooked through, golden and crisp. A little bacon fat is an option for flavor.

Provided by Julia Moskin

Categories     dinner, main course

Time 1h

Yield 4 servings

Number Of Ingredients 6

1 tablespoon plus 1 teaspoon salt
1 chicken with skin, about 2 1/2 pounds, cut up into 8 pieces (see note)
1 teaspoon black pepper
1 cup all-purpose flour
2 cups vegetable oil, like grapeseed, peanut or canola (do not use olive oil)
1/4 cup bacon drippings (or use more oil)

Steps:

  • Combine 1 tablespoon salt with 3 quarts water in a large bowl or container. Add chicken, cover and refrigerate 8 hours or overnight. Drain, rinse with cold water and pat dry.
  • Stir together remaining 1 teaspoon salt and the black pepper. Sprinkle half the mixture evenly over chicken.
  • In a large sealable plastic bag, combine remaining pepper mixture and flour. Add 2 pieces chicken to bag and shake well to coat. Remove chicken pieces, shaking off extra flour, and set aside. Repeat with remaining chicken.
  • Take a large (10- or 12-inch) cast-iron skillet or chicken fryer, for which you have a lid, and fit with a candy or deep-frying thermometer. Add oil and bacon drippings and heat to 360 degrees over medium heat; the oil will ripple and possibly give off a few wisps of smoke.
  • Using tongs, immediately add chicken pieces, skin side down (work in batches if necessary to avoid crowding pan). The oil will drop to about 325 degrees, where it should stay; adjust heat so that oil is bubbling gently around the pieces. Cover and cook 6 minutes; uncover and cook 9 minutes. Turn chicken pieces; cover and cook 6 minutes. Uncover and cook another 5 to 9 minutes, depending on size of pieces. If necessary for even browning, turn pieces over a few times toward the end.
  • Drain on paper towels or paper bags. Let cool at least 20 minutes before serving.

CLASSIC SOUTHERN FRIED CHICKEN

Classic Southern Fried Chicken image

This is a basic Southern fried chicken recipe and the only one you will ever need. Chicken pieces are fried to perfection with a seasoned flour coating.

Provided by Diana Rattray

Categories     Entree     Dinner

Time 1h15m

Yield 4

Number Of Ingredients 7

1 1/2 cups milk
2 large eggs
2 1/2 cups all-purpose flour
2 tablespoons salt (plus additional for sprinkling)
2 teaspoons black pepper
4 pounds chicken (bone-in, skin-on pieces)
3 cups vegetable oil (or amount needed for frying)

Steps:

  • Gather the ingredients. Preheat the oven to 200 F and place a rack in a large baking pan.
  • In a medium bowl, combine the milk and eggs. Whisk to blend well.
  • In a large heavy-duty resealable plastic food storage bag, combine the flour, 2 tablespoons salt, and pepper. Seal and shake to combine.
  • Dip the chicken pieces in the milk and egg mixture and let excess drip off into the bowl. Set already dipped pieces aside on a plate until you have three or four.
  • Add the dipped chicken pieces to the bag of seasoned flour.
  • Seal the bag and shake well to coat the chicken pieces thoroughly.
  • Remove to a plate and repeat with the remaining chicken pieces.
  • Heat the oil in a deep, heavy skillet to 350 F. While it's heating up, set aside a large serving plate lined with paper towels.
  • Fry the chicken, a few pieces at a time, for about 10 minutes on each side, or until golden brown and thoroughly cooked. Be careful not to put too many chicken pieces in at once-even if they can comfortably fit-since this will dramatically drop the temperature of the oil, affecting the crispness of the final product. Note that chicken breasts will take a little less time than dark meat pieces.
  • With a slotted spoon, move the done chicken pieces onto the paper towel-lined platter to drain. Sprinkle immediately with salt.
  • Transfer the drained and seasoned chicken to the prepared pan with a rack. Keep warm in the preheated oven while frying subsequent batches. Depending on the size of your pan, this recipe will require about 3 to 4 batches.

It has a crispy, huge thick coating with the southern "touch" (the magical ingredients being the vinegar and baking powder) and tender inside. Oh ! my ! never a chicken like this.

FRIED CHICKEN MARINADE

Fried Chicken Marinade image

Great marinade for southern fried chicken and my favorite to use for buffalo wings. I think it came from Gourmet magazine around 2000.

Time 5m

Yield 1 serving(s)

Number Of Ingredients 7

1 quart water
2 tablespoons salt
2 teaspoons cayenne pepper
2 garlic cloves, minced
1 1/2 teaspoons white pepper
1 tablespoon soy sauce
2 teaspoons Worcestershire sauce

Steps:

  • Marinate for at least 24 hours for fried chicken. I marinate wings for 2 to 3 hours.

Nutrition Facts : Calories 49.4, Fat 0.8, SaturatedFat 0.1, Sodium 15090.7, Carbohydrate 9.7, Fiber 2.2, Sugar 1.9, Protein 3.1

Tips:

  • Use a flavorful marinade. The marinade is what gives the chicken its flavor, so make sure to use one that you love. Some good options include buttermilk, yogurt, olive oil, lemon juice, garlic, herbs, and spices.
  • Let the chicken marinate for at least 4 hours, or overnight. The longer the chicken marinates, the more flavorful it will be. If you're short on time, you can marinate the chicken for as little as 30 minutes, but the flavor won't be as developed.
  • Use a well-seasoned cast iron skillet. A cast iron skillet will give the chicken a nice crispy crust. If you don't have a cast iron skillet, you can use a nonstick skillet, but the chicken won't be as crispy.
  • Don't overcrowd the skillet. If you overcrowd the skillet, the chicken will steam instead of fry. Cook the chicken in batches if necessary.
  • Cook the chicken over medium-high heat. This will help the chicken get crispy without burning.
  • Use a meat thermometer to make sure the chicken is cooked through. The internal temperature of the chicken should reach 165 degrees Fahrenheit before you remove it from the skillet.

Conclusion:

Southern marinated fried chicken is a delicious and easy-to-make dish that is perfect for any occasion. With a flavorful marinade, a crispy crust, and juicy meat, this chicken is sure to be a hit with everyone who tries it. So next time you're looking for a delicious and satisfying meal, give southern marinated fried chicken a try.
