1 cup all-purpose flour
1 tablespoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup mashed ripe banana
¼ cup white sugar
¼ cup sour cream
1 egg
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.

1/8 teaspoon fine salt

Steps:

  • Preheat the oven to 425 degrees F. Lightly brush a 12-muffin tin with butter and set aside.
  • Whisk the flour, baking soda, brown sugar, and cinnamon together in a medium bowl; set aside.

1/4 cup pecans, chopped (1 ounce)
2 tablespoons Splenda brown sugar blend
1/2 cup Splenda granular (sugar substitute)
2/3 banana, ripe and mashed (2 medium)
1 egg (or equivalent in egg substitute)
1/3 cup applesauce (unsweetened)
1 teaspoon vanilla extract
