4 cups dry pinto beans
1 pound thick-cut bacon, cut into pieces
2 whole green bell peppers, diced
1 whole onion, diced
1 cup brown sugar
1/4 cup ketchup
2 tablespoons mustard
1 tablespoon chili powder, optional
2 teaspoons salt, more to taste
2 teaspoons black pepper, more to taste
4 cloves garlic, minced

Steps:

  • Rinse the beans under cold water, sorting out any rocks/particles. Set aside.
  • In a heavy pot (cast iron), saute the bacon pieces until halfway cooked and the fat is rendered. Add the green peppers and onions to the pot and cook until starting to get brown, about 3 minutes. Add the beans and cover with water by 1 inch. Bring to a boil, and then add the brown sugar, ketchup, mustard, chili powder, salt, pepper and garlic. Reduce the heat to a simmer, place on the lid and cook until the beans are tender and the liquid is thick 3 to 4 hours.

1 medium onion, chopped
2 garlic cloves, minced
2 cups reduced-sodium beef broth
3 cups water
1 package (16 ounces) 16-bean soup mix
1 can (10 ounces) diced tomatoes and green chiles, undrained
1 can (8 ounces) tomato sauce
1 poblano pepper, chopped
1/4 cup packed brown sugar
1 envelope taco seasoning
TOPPINGS: chopped fresh cilantro, shredded cheddar cheese and sour cream

Steps:

  • Select saute or browning setting on a 6-qt. electric pressure cooker; adjust for medium heat. Cook bacon until crisp, 4-5 minutes. Add onion and garlic; cook until tender, 5-6 minutes longer. Add broth to pressure cooker. Cook 30 seconds, stirring to loosen browned bits from pan. Press cancel., Add water, soup mix, tomatoes and green chiles, tomato sauce, poblano pepper, brown sugar and taco seasoning. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 90 minutes. Let pressure release naturally., If desired, select saute setting and adjust for low heat. Simmer, stirring constantly, until desired consistency. 1 lbs. dried pinto beans, soaked per
pkg directions, and rinsed
2 large dried ancho chili peppers
1 can (14.5 oz) Fire Roasted Diced
Tomatoes
1 Medium Red Onion, diced
1 Medium Red Bell Pepper, diced
1 Poblano Pepper, seeded/diced
2 Tbs Garlic, chopped
2 Tbs Chipotle Chili Pepper in Adobo
Sauce, chopped
1 Tbs Cumin
2.5 Tbs Chili Powder
.5 Tbs Crushed Red Pepper
1 Tbs Salt
1/4 cup Worcestershire
1/2 cup Catsup
1 cup strong brewed coffee
1/4 cup Cider Vinegar
1/4 cup brown sugar

Steps:

  • Soak ancho chili peppers in hot water X 15 minutes; drain and chopped. Add all ingredients in slow cooker. Cook on hi X 8-10 hrs. Depending on your cooker, it may take longer or shorter for the beans to soften. After 6 hrs, start checking every hour unless you have cooked these type beans before in your cooker.

You can mix different beans to your liking (lima, kidney, etc.), but the boys in our family like this mixture the best.

1 pound bacon
2 pounds ground beef
1 large onion, chopped
1 cup ketchup
⅓ cup brown sugar
1 (55 ounce) can baked beans (such as Bush's®)
2 (15 ounce) cans Great Northern beans
1 (15 ounce) can pinto beans
1 (15 ounce) can pork and beans

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crispy, 10 to 12 minutes. Drain bacon slices on paper towels and crumble when cool enough to handle.

My father taught me how to do this as a child and he loved to eat it and make it. It is a great recipe for those that love the outdoors and really would rather not have to make a huge dinner after a hike! I love it because it is filling, has a lovely southwestern flavor - old southwest, and because it is a wonderful protein, iron and potassium meal! *Note, if the beans are not completely crushable (pressed between fingers and mashed completely) they will not taste good. When sorting, do not put in beans that have been broken in half or have any kind of serious flaw. This will make your beans bitter. Make sure that you do not add too much water or too little as it will make it watery or burn.

3 tablespoons butter
16 ounces cream cheese
2 large eggs
1/4 teaspoon salt
8 ounces cheddar cheese, shredded
4 ounces green chilies, chopped
1 cup sour cream
2 tablespoons taco seasoning
1/2 cup red bell pepper, diced
1/2 cup yellow pepper, diced
1/2 cup green pepper, diced
1/2 cup tomatoes, diced & drained
1/2 cup black olives, chopped
1/2 cup green olives, chopped
1/2 cup scallion, chopped
1 salsa, of your choice

Steps:

  • Preheat oven to 325F.
