I got this recipe from Trader Joe's after trying a sample because we loved it. Posting it here for safekeeping! Great for BBQs and picnics because it won't spoil in the heat. I left out the green onions and used a couple tablespoons of a good balsamic vinegar. You could easily add other veggies to this too!

8 ounces israeli couscous (TJ's brand)
14 ounces of corn and chile salsa (TJ's brand)
1 seedless cucumber, chopped fine
1 red bell pepper, chopped fine
1 bunch green onion, chopped fine
1 splash balsamic vinegar

Steps:

  • Prepare couscous according to package instructions and allow to cool.
  • Chop veggies and combine with the whole jar of salsa and balsamic, stir in couscous.
  • Add salt and pepper to taste
  • Serve cold or at room temperature.

Never cared to much for Couscous until I tried this one.Quick,easy and yummy.

Number Of Ingredients 9

1 cup water
i/2 tsp salt
3/4 cup couscous
2 1/2 Tbsp fresh lime juice
1 1/2 Tbsp olive oil
1/2 tsp ground cumin
1/2 c rinsed and drained can black beans
1/2 c chopped tomato
1/3 c chopped fresh cilantro

Steps:

  • 1. Bring 1 cup water and salt to a boil in a medium saucepan,gradually stir in couscous.Remove from heat,cover and let stand 5 minutes. Fluff with a fork.
  • 2. While couscous stands,combine lime juice,olive oil and cumin in a large bowl,stir with a whisk. Stir in beans and next 3 ingredients. Add Couscous,toss gently with a fork and serve
