Southwestern couscous is a delicious and versatile dish that can be enjoyed as a main course or a side dish. It is made with couscous, a type of pasta made from semolina flour, and is typically flavored with a blend of spices, such as chili powder, cumin, and paprika. Southwestern couscous can be cooked in a variety of ways, but it is often simmered in a broth or sauce until the couscous is tender and fluffy. It can also be cooked in a skillet or in the oven. Once cooked, southwestern couscous can be served with a variety of toppings, such as grilled chicken or shrimp, roasted vegetables, or a dollop of salsa or guacamole.

TRADER JOE'S SOUTHWESTERN COUSCOUS SALAD
I got this recipe from Trader Joe's after trying a sample because we loved it. Posting it here for safekeeping! Great for BBQs and picnics because it won't spoil in the heat. I left out the green onions and used a couple tablespoons of a good balsamic vinegar. You could easily add other veggies to this too!
