1 pound boneless skinless chicken breast halves, cut into 1/2-inch strips
1 small zucchini

2 tablespoons chopped fresh cilantro

Steps:

  • Mix lime juice and chili powder in medium glass or plastic bowl; stir in chicken. Cover and refrigerate 15 minutes. Cut zucchini and yellow squash into thin slices.
  • Heat 12-inch skillet or wok over high heat. Add 1 tablespoon of the oil; rotate skillet to coat side.

2 tablespoons olive oil
1 large zucchini, trimmed and diced
1 small red bell pepper, seeded and cut into 1/4-inch strips
1 small yellow bell pepper, seeded and cut into 1/4-inch strips
½ small red onion, thinly sliced
1 cup fresh or frozen corn kernels
1 medium jalapeno pepper, seeded and thinly sliced
1 medium garlic clove, minced
1 ½ tablespoons freshly squeezed lime juice
1 teaspoon chili powder
1 pinch salt and freshly ground black pepper to taste
1 teaspoon cornstarch mixed with

1 lb pork tenderloin, cut in quarters lengthwise,then in slices
2 tablespoons dry sherry
2 teaspoons cornstarch
1 teaspoon ground cumin
1 clove garlic, minced
1/2 teaspoon seasoning salt
1 tablespoon vegetable oil
1 green pepper, seeded and cut in strips
1 medium onion, thinly sliced
12 cherry tomatoes, halved

Steps:

  • Combine sherry, cornstarch, cumin, garlic and salt in medium bowl; add pork slices and stir to coat.
