Tips:

  • Choose the right sweet potatoes: Look for firm, unblemished sweet potatoes that are about the same size so that they cook evenly.
  • Use fresh or frozen corn: If using fresh corn, remove the kernels from the cob. If using frozen corn, thaw it according to the package directions.
  • Rinse the black beans: Rinsing the black beans removes the excess starch and helps to prevent them from becoming mushy.
  • Use a large skillet: A large skillet will allow the ingredients to cook evenly. If you don't have a large skillet, you can cook the ingredients in batches.
  • Cook the ingredients over medium heat: Medium heat will help to prevent the ingredients from burning.
  • Season the dish to taste: Add salt, pepper, and cumin to taste. You can also add other spices, such as chili powder or paprika, if desired.
  • Serve the dish with your favorite toppings: Serve the Southwestern Sweet Potatoes and Black Beans with your favorite toppings, such as sour cream, salsa, or guacamole.
