1/4 cup extra-virgin olive oil
1 medium onion, coarsely chopped
2 garlic cloves, peeled and coarsely chopped
1 celery stalk, coarsely chopped
1 carrot, coarsely chopped
1 pound ground chuck beef
One 28-ounce can crushed tomatoes
1/4 cup flat-leaf Italian parsley, chopped
8 fresh basil leaves, chopped
Salt and freshly ground black pepper
1/4 cup freshly grated Pecorino Romano

Steps:

  • In a large skillet heat the olive oil. When almost smoking, add the onion and garlic and saute over medium heat until the onions become very soft, about 8 minutes. Add the celery and carrot and saute for 5 minutes. Raise heat to high and add the ground beef. Saute, stirring frequently and breaking up any large lumps and cook until meat is no longer pink, about 10 minutes. Add the tomatoes, parsley and basil and cook over medium low heat until the sauce thickens. Season with salt and pepper. This will take approximately 1/2 hour. Finish bolognese with Pecorino Romano.

1 teaspoon Italian seasoning
1/4 teaspoon crushed red pepper flakes
1 tablespoon butter
1 cup thinly sliced white mushrooms
1/4 lb uncooked spaghetti, broken in half
2 cups Progresso™ chicken broth (from 32-oz carton)
1/4 cup heavy whipping cream
1 clove garlic, finely chopped
2 cups baby spinach leaves
1/4 cup shredded Parmesan cheese
1/2 teaspoon fresh lemon juice

Steps:

  • In small bowl, toss chicken, Italian seasoning and pepper flakes. In 4-quart saucepan, melt butter over medium-high heat. Add chicken; cook 2 minutes without moving, until browned on first side. Stir; add mushrooms, and cook 4 to 6 minutes longer, stirring frequently, until mushrooms soften.
  • Add spaghetti, broth, whipping cream and garlic. Heat just to boiling over high heat. Reduce heat to medium; cook 12 to 16 minutes, stirring frequently, until pasta is cooked. Stir in spinach and Parmesan cheese. Remove from heat; let stand 1 minute. Stir in lemon juice.

1/2 pound lean ground beef (90% lean)
1/4 cup chopped onion
2 cups meatless spaghetti sauce
1 cup water
3 ounces uncooked spaghetti, broken
1/4 pound reduced-fat process cheese (Velveeta), cubed
2 teaspoons grated Parmesan cheese

Steps:

  • In a nonstick skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the spaghetti sauce, water and spaghetti; bring to a boil. Reduce heat; cover and simmer for 20 minutes or until spaghetti is tender. Add process cheese; stir until melted. Sprinkle with Parmesan cheese.

1 small onion (chopped)
1 bell pepper (chopped)
2 tablespoons garlic powder
3 tablespoons butter
1 teaspoon salt
1 teaspoon pepper
2 (15 ounce) cans tomato sauce
1 (16 ounce) box spaghetti noodles
1 -1 1/2 lb hamburger meat

Steps:

  • On medium heat melt the butter and sautee the onion and bell peppers.
  • Add the hamburger meat and cook until meat is well done.
  • Add the tomato sauce, salt, pepper and garlic powder.
  • Salt, pepper and garlic powder can be adjusted to your own tastes.
  • Cook noodles as directed.
  • Mix the sauce and noodles if you like, I keep them separated.
